I made this cake a few times for family gatherings, and for my husband. Everyone thoroughly enjoyed this cake and wanted more. This cake is soooo good because it is made from fresh key limes and from scratch.

CAKE:
3 ounce(s) package lime flavored gelatin
1 1/2 cup(s) granulated sugar
2 cup(s) sifted all-purpose flour
1/2 teaspoon(s) salt
1 teaspoon(s) baking powder
1 teaspoon(s) baking soda
5 large eggs, slightly beaten
1 1/2 cup(s) vegetable oil
3/4 cup(s) orange juice, fresh
1 tablespoon(s) lemon juice
1/2 teaspoon(s) vanilla extract
1/4 cup(s) key lime juice
1/2 cup(s) confectioners' sugar
CREAM CHEESE ICING:
1/2 cup(s) butter, room temperature
1 - 8 ounce(s) package cream cheese, room temperature
16 ounce(s) box confectioners' sugar

Steps:

  • Preheat oven to 350 degree and flour 3 9-inch-round cake pans. In a large bowl, mix gelatin, sugar, flour, salt, baking powder, and baking soda. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide batter evenly among the 3 pans and bake for 35 to 40 mins.Test for doneness,cool layers in pan for 5 mins., then turn onto racks. While layers are still hot, mix the lime juice and confctioners' sugar and pour over the layers on the racks,. You can pierce the layers with a fork and allow the glaze to soak in better. Let layers cool completely before icing.
  • Cream butter and cream cheese, beat in confectioners' sugar until mixture is smooth and easy to spread. Spread icing between layers and on top and sides of cake. Cream cheese icing is optional. Cake is beautiful and taste great with just the glaze. I prefer icing the cake.

  • In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom and up the sides of a 7-in. pie plate coated with cooking spray. Bake at 325° for 8-10 minutes or until lightly browned. Cool on a wire rack., In a small saucepan, combine the sugar, flour, cornstarch and salt; gradually stir in water and, if desired, food coloring. Cook and stir over medium heat until thickened. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in lime juice, butter and lime zest. , Pour into crust. Cool for 15 minutes. Refrigerate for 1-2 hours. If desired, garnish with whipped cream, lime slices and zest. Refrigerate leftovers.

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. In a large bowl, cream butter, sugar and zest until light and fluffy, 5-7 minutes. Add juice and vanilla, and mix on high for 1 minute. Add 1 egg at a time, on low speed just until yellow disappears. Scrape down bowl as needed and between each addition. Sift flour and salt together into clean bowl. Add 1/3 of the flour mixture alternately with 1/2 of the milk, on low speed until just mixed, beginning and ending with flour. Transfer to prepared pan. , Bake until a toothpick inserted in center comes out clean or with a moist crumb, 1-1/4 to 1-1/2 hours. Cool in pan 10 minutes before removing to a wire rack to cool completely. , For frosting, in a large bowl, beat cream cheese, butter, lime zest and lime juice until smooth. Gradually beat in confectioners' sugar. Spread over cake. If desired, garnish with lime slices and additional zest.
