- Preheat oven to 425°. In a large oven-safe skillet over medium-high heat, heat 1 tablespoon of the oil. Season pork chops with salt and pepper and add to skillet. Sear until golden, 3 minutes per side. Transfer skillet to oven and bake until cooked through, 10 to 12 minutes.Meanwhile, in a large bowl, toss pineapple, bell pepper, red and green onions, lime juice, and the 2 remaining tablespoons of the oil until combined. Season with salt and pepper.Let chops rest 5 minutes, then top with pineapple salsa before serving.

Steps:
- Trim most of the fat off the chops
- Heat a frying pan very hot
- Add 2 tablespoons of cooking oil
- Brown the pork chops on both sides
- Set the browned pork chops aside
- Once you have browned all of the meat add 1/2 of the salsa verde to your frying pan
- Add all of the pork chops to the pan
- Pour the remaining salsa over the pork chops
- Turn the heat to low and simmer for about 15 minutes until the salsa has noticeably reduced
