bone-in pork chops, fat trimmed

Kosher salt

Freshly ground black pepper

chopped pineapple

red bell pepper, diced

small red onion, chopped

green onions, thinly sliced

Juice of 1 lime

Steps:

  • Preheat oven to 425°. In a large oven-safe skillet over medium-high heat, heat 1 tablespoon of the oil. Season pork chops with salt and pepper and add to skillet. Sear until golden, 3 minutes per side. Transfer skillet to oven and bake until cooked through, 10 to 12 minutes.Meanwhile, in a large bowl, toss pineapple, bell pepper, red and green onions, lime juice, and the 2 remaining tablespoons of the oil until combined. Season with salt and pepper.Let chops rest 5 minutes, then top with pineapple salsa before serving.

8 very thinly sliced pork chops (about 2 pounds)
2 cups salsa verde (see recipe)
2 tablespoons cooking oil
salt as necessary

Steps:

  • Trim most of the fat off the chops
  • Heat a frying pan very hot
  • Add 2 tablespoons of cooking oil
  • Brown the pork chops on both sides
  • Set the browned pork chops aside
  • Once you have browned all of the meat add 1/2 of the salsa verde to your frying pan
  • Add all of the pork chops to the pan
  • Pour the remaining salsa over the pork chops
  • Turn the heat to low and simmer for about 15 minutes until the salsa has noticeably reduced
