Use this salsa recipe from Reina Soler (Red Hook Food Vendors) to make her Pupusas de Queso.

Number Of Ingredients 6

8 large tomatoes, cored and coarsely chopped
1 medium onion, coarsely chopped
1 medium green bell pepper, stemmed, seeds removed, and coarsely chopped
1 clove garlic, minced
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, mix all ingredients together along with 1/2 cup water until well combined. Transfer to the jar of a blender; blend until pureed.
  • Transfer to a medium saucepan; bring to a boil over medium heat. Reduce heat to a simmer and cook for 10 minutes. Remove from heat and let cool. Serve warm or cold.

2 tb White Onions chopped
1/2 lb Tomatillos
2 tb Cilantro chopped
1 Garlic
4 Chiles Serranos
1/3 c Water

Steps:

  • "Remove the paper husks from the tomatillos. Rinse thoroughly. Chop coarsely. Add the tomatillos to the blender along with the garlic, chiles, salt and water. Pulse until the ingredients are chopped finely but not blended. Stir in the onion and coriander. Serve slightly warmed."
