Honey Garlic Salmon with Roasted Cherry Tomatoes and Zucchini image

0.25 c. of fresh lemon juice
1 tbsp. of dried dill
2 tbsp. of Hy-Vee honey
3 clove(s) of garlic
1 tsp. of Hy-Vee salt
1 tsp. of Hy-Vee ground black pepper
4 (4-oz. each) salmon fillets
8 slice(s) of fresh lemon
2 medium zucchini
1.5 c. of whole cherry tomatoes
1 tbsp. of Gustare Vita olive oil

Steps:

  • 1.

    Preheat oven to 400 degrees. Line a large baking pan with parchment paper; set aside. Whisk together lemon juice, dried dill, honey, garlic, 1/2 teaspoon salt, and 1/2 teaspoon ground black pepper in a small bowl; set aside. 

  • 2.

    Place salmon fillets in the middle of the prepared baking pan; spoon lemon juice mixture over salmon. Place 2 lemon slices on each fillet. Place zucchini slices and tomatoes in a medium bowl. Toss with olive oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Arrange vegetables around salmon.

    Bake 13 to 17 minutes or until salmon reaches 145 degrees. Garnish with fresh dill, if desired.

4 Salmon each about 6 oz)
salt
freshly ground peppers
3 tablespoons melted butter
12 ounces Tagliatelle
3 zucchini
5 tomatoes
3 garlic
2 tablespoons olive oil
flat-leaf parsley (for garnishing)

Steps:

  • Rinse salmon fillets and pat dry. Season with salt and pepper. Arrange in a baking dish and brush with melted butter. Cook pasta according to package instructions in plenty of boiling salted water until al dente. Drain well. 
  • Rinse and peel zucchini. Slice thinly and cut into fine strips. Rinse and dry tomatoes, remove stalks and cut pulp into cubes. Peel and chop garlic.  
  • Roast salmon in a preheated oven at 400°F for about 12 minutes. Heat olive oil in a large, non-stick pan and saute garlic and zucchini, stirring. Add diced tomatoes and season with salt and pepper. Simmer on medium heat for 3-4 minutes.
  • Add pasta to the pan and toss well. Arrange on plates and top with salmon. Garnish with parsley and serve hot.
