PEA & SALMON FISHCAKE RECIPE | JAMIE OLIVER RECIPES
A simple and really tasty fishcake recipe that's easy for the kids to help out with. This is recipe is just as delicious made with tinned tuna, or you could swap the regular potatoes for a few sweet potatoes. Have fun!

- If using fresh peas, pod them into a bowl, then leave to one side.
- Use a Y-shaped peeler to peel the potatoes, then chop into 1cm chunks on a chopping board.
- Once the water is boiling, carefully add the potatoes, bring back to the boil, then turn the heat down to medium and simmer gently for around 10 minutes, or until cooked through, adding the peas for the last 2 minutes. Meanwhile…

- Add the salmon to the bowl, using a fork to flake it into small chunks.

- Use a microplane to finely grate the lemon zest, then add it to the bowl along with the flour.
- Crack in the egg and season with a tiny pinch of pepper.
- Once cool, tip the potatoes and peas back into the pan and use a potato masher to mash them really well.
- Add the mash to the bowl, then mix together until really well combined.
- Sprinkle a little flour over a clean work surface and onto a large plate.
- Divide the mixture into 8 and use your hands to pat and shape each ball into a fishcake, roughly 2cm thick.
- Place them onto the floured plate, dusting your hands and the top of each fish cake lightly with flour as you go.
- Place a large frying pan on a medium heat and add 1 tablespoon of olive oil.
- Carefully place the fishcakes into the pan and cook for 3 to 4 minutes on each side, or until crisp and golden, turning carefully with a fish slice.
- Cut the zested lemon into wedges.
- Serve the fishcakes with some seasonal green veg or a fresh green salad and lemon wedges for squeezing over.

Sticking to a vegan diet doesn't have to mean giving up your favourite meals. With this recipe from The Tofoo Cookbook, you can create crispy, plant-based fish and chips at home.

Preheat the oven to 200°C/180°C fan/400° F/gas mark 6.
Bring a large pan of lightly salted water to the boil and cook the potato chips for 5 minutes. Drain the potatoes and dry really well with kitchen paper. Toss in 4 tablespoons of olive oil. Spread out over a non-stick baking tray and cook in the oven for 30 minutes, turning halfway through cooking.
Meanwhile, cook the peas in a pan of boiling water for 5 minutes, drain well and tip into a food processor with the creme fraiche. Blitz until well combined. Alternatively, mash them together with a fork. Return to the pan and set aside.
Pat the Tofoo once more with kitchen paper until very dry. Dust with the seasoned plain flour. Mix together the self-raising flour and seaweed, if using, then slowly whisk in the ale. Whisk until the batter is smooth and creamy.
Heat about 8cm of oil in a saucepan pan to 180°C. (If you do not have a thermometer, add a square of bread to the oil, if it sizzles the oil is ready ) Take a piece of Tofoo and dip it in the batter to coat evenly, then carefully lower into the hot oil and cook for 2-3 minutes until golden and crispy. Repeat with the remaining three pieces.
Gently reheat the peas.
Serve the battered Tofish with chips and a spoonful of peas, and don’t forget the lemon wedge for a squeeze of sharpness.

To make the spice paste, blitz the onions and garlic until pulsed but not a smooth paste.
Put the oil into a pan on a medium heat. When it’s hot, add the onions and garlic and cook for 10–15 minutes, until the onions are brown. Now add the vinegar, fish sauce, soy sauce, brown sugar and chilli paste, and cook until the mixture is a thick paste with no liquid. This should take about 20 minutes on a medium to low heat.
When the spice paste is cooked and cooled, put it into a jar – it should keep in the fridge for 2 months.
Now to make the noodles. Put a tablespoon of the spice paste into a 500ml jar, along with your portion of noodles and all the other bits. Leave it in the fridge, and when you are ready to eat, pour 300ml of boiling water into the jar and pop the lid on. I like my noodles brothy, but if you like a drier noodle, just add less water. These are great for home but also perfect for taking to work.

Chicken and Pea:
