12 ounce salmon fillet, cut into 4 pieces
Coarse-grained salt
Freshly ground black pepper
Toasted Almond Parsley Salsa, for serving
Baked squash, for serving, optional
1 shallot
1 tablespoons red wine vinegar
Coarse grain salt
2 tablespoons capers, rinsed
1 cup fresh flat-leaf parsley
1/2 cup toasted almonds
Extra-virgin olive oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes. Serve with the Toasted Almond Parsley Salad and squash, if desired.
  • Mince the shallot and add to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let sit for 30 minutes.
  • Roughly chop the capers, parsley and almonds and add to the shallots. Add the olive oil, tasting as you go. Mix again and adjust the seasonings.

This baked salmon is seasoned with salt and pepper, then drizzled with a flavorful marinade of mustard, honey, lemon juice, and olive oil.

4 tbsp. olive oil
6 salmon fillets (about 2 1/2 lb. total)
1 1/4 tsp. salt
1/2 tsp. ground black pepper
1 tbsp. honey
1 tbsp. Dijon mustard
1 tbsp. lemon juice
Chopped fresh parsley, dill, or chives, for garnish
Lemon wedges, for serving 

Steps:

  • Preheat the oven to 325°.
  • Drizzle a large sheet tray with 3 tablespoons of olive oil and spread all over. Place the salmon fillets on the tray, leaving about 1 inch of space in between each fillet. Season all over with salt and pepper.
  • Whisk to combine the remaining 1 tablespoon of olive oil, honey, Dijon mustard, and lemon juice in a small bowl. Drizzle evenly over the fillets. 
  • Bake until the thickest part of the salmon flakes easily with a fork and the flesh is opaque, 12 to 15 minutes (an instant-read thermometer should read between 125° and 130°). Transfer salmon to a serving platter; top with fresh herbs and serve with lemon wedges, if you like.
