Salmon Salad Lettuce Wraps - HMR image

Lettuce wraps are a crunchy and light alternative to the typical sandwich or salad or perfect for an afternoon snack in Phase 2. The protein from the salmon and Greek yogurt will not only make your taste buds happy, but will leave you feeling full and satisfied!

1 pouch StarKist Pink Salmon in water
1 container nonfat Greek yogurt (5.3 oz, 80-100 calories)
1 Tablespoon chives, finely diced
Juice from 2 lemon wedges
Salt and pepper, to taste
Dijon mustard, to taste
Romaine or Boston lettuce leaves, washed and dried, for wraps

Steps:

  • 1. Place all ingredients into a small bowl and mix.
  • 2. Add about 2 tbsp. of salmon salad in 1 leaf of lettuce and wrap.
  • 3. Continue making wraps until all of the salmon salad is used.

Salmon lettuce wraps are a family favorite - especially made with luscious wild salmon which is always silky soft and never dry. Our recipe comes with quick pickled carrots which add a lovely crunch. Lay out all the ingredients and have everyone make their own wraps - delicious, messy fun! Recipe by Casey Landaluce.

Number Of Ingredients 14

1 pound wild sockeye salmon
salt & pepper
1 teaspoon oil
12 leaves butter lettuce
1 cup sliced cucumber
1 cup pickled carrots
? cup each fresh herbs: basil, mint, cilantro
½ cup chopped peanuts
1 cup dipping sauce of choice: nuoc cham, peanut sauce, or sweet chili sauce
PICKLED CARROTS:
1 cup julienned carrots
¼ cup unseasoned rice vinegar
1 Tablespoon honey
¼ teaspoon salt

Steps:

  • 1. PICKLED CARROTS DIRECTIONS: 2. Combine vinegar, honey and salt in a small saucepan. Heat until dissolved, then add carrots. 3. Let cool and refrigerate for an hour, preferably overnight. 4. LETTUCE WRAPS DIRECTIONS: 5. Season salmon with salt and pepper. 6. Heat oil in pan over medium-high heat. 7. Add salmon flesh side down and cook for 3 minutes. Flip salmon and cook 2-4 minutes, or until just cooked through. 8. Gently flake salmon, and arrange on platter with the vegetables and herbs. 9. Offer the peanuts and dipping sauce on the side. 10. To assemble, place about one ounce of cooked salmon in a lettuce cup then add vegetables and herbs and top with peanuts and a drizzle of sauce.
