These salmon cakes are popping with flavor and little filler! I don't like canned salmon, so I chose to use salmon packets (found in the tuna aisle).

1 large egg
2 tablespoons mayonnaise
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh chives
½ teaspoon Worcestershire sauce
½ teaspoon Dijon mustard
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon salt
¼ cup panko bread crumbs
2 (5 ounce) packages of fresh salmon

Steps:

  • Preheat an air fryer for 10 minutes to 400 degrees F (200 degrees C).
  • Whisk egg, mayonnaise, parsley, chervil, dill, chives, Worcestershire sauce, mustard, seafood seasoning, and salt together in a bowl. Mix in panko bread crumbs until combined. Gently fold in salmon.
  • Shape mixture into 4 cakes. Line the air fryer basket with perforated parchment.
  • Air-fry salmon cakes for 8 minutes, flipping at the halfway point. Serve immediately.

These air-fried salmon patties are reminiscent of classic salmon croquettes, crispy on the outside and pillowy tender on the inside. Look for canned or jarred salmon that has less than 50 milligrams of sodium per serving, and don't be afraid of varieties that have bones. They're easy to remove.

2 (7.5 ounce) cans unsalted pink salmon (with skin and bones)
1 large egg
½ cup whole-wheat panko breadcrumbs
2 tablespoons chopped fresh dill
2 tablespoons canola mayonnaise
2 teaspoons Dijon mustard
¼ teaspoon ground pepper
2 lemon wedges

Steps:

  • Coat the basket of an air fryer with cooking spray.
  • Drain salmon; remove and discard any large bones and skin. Place the salmon in a medium bowl. Add egg, panko, dill, mayonnaise, mustard and pepper; stir gently until combined. Shape the mixture into four 3-inch-diameter cakes.
  • Coat the cakes with cooking spray; place in the prepared basket. Cook at 400 degrees F until browned and an instant-read thermometer inserted into the thickest portion registers 160 degrees F, about 12 minutes. Serve with lemon wedges.
