I am not a big fish eater, but my family is - so I had to find a way of serving fish that we all liked. These salmon burgers were the perfect solution for us! Serve on hamburger buns with preferred garnish (lettuce, tomato, onion, etc.)

2 pounds salmon, finely diced
1 small yellow onion, finely diced
¾ cup panko bread crumbs
1 green bell pepper, finely diced
3 cloves garlic, minced
1 egg, beaten
1 tablespoon soy sauce
1 teaspoon lemon juice
½ teaspoon salt
1 cup mayonnaise
2 cloves fresh garlic, minced
1 teaspoon dried basil
1 teaspoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon lemon pepper

Steps:

  • Combine salmon, onion, bread crumbs, green bell pepper, 3 cloves garlic, egg, soy sauce, 1 teaspoon lemon juice, and salt in a large bowl; mix until evenly blended. Shape salmon mixture into eight patties.
  • Heat a large non-stick skillet over medium-high heat. Cook salmon patties until golden brown, 4 to 6 minutes per side.
  • Whisk mayonnaise, 2 cloves garlic, basil, 1 teaspoon lemon juice, Dijon mustard, and lemon pepper in a bowl until well mixed. Serve mayonnaise mixture with salmon patties.

These fish burgers are full of flavor, good-for-you fats, and hearty enough to load up with all of your favorite toppings. This salmon burger recipe will make 4 patties. Alternatively, this recipe can produce 6-8 salmon sliders if you decide to form smaller patties.

12 ounces skinless salmon, ground or finely diced
½ cup breadcrumbs
1 shallot, finely diced (should be about ¼ cup)
1 tbsp Dijon mustard
1 tbsp mayo
1 tsp sriracha or dash of ground cayenne, optional
1 tsp salt
Ground black pepper
2 tbsp cooking oil
Burger buns

Steps:

  • In a large mixing bowl, gently combine all burger patty ingredients (everything on the ingredient list except for the cooking oil, burger buns and salmon burger toppings). Don’t overmix your burger patty mixture, as this can result in a too dense burger by the time all of the ingredients are integrated. See if you can form a patty that nearly holds together — it doesn’t have to be perfect here, as the cooking process will do the rest of the work. But if the mixture still seems as if it isn’t quite binding, add in another ¼ of breadcrumbs or breadcrumb alternative. Keep in mind, though, that adding too much is counterproductive and will inhibit a patty from forming.
  • Gently form 4 patties — they’ll be about 3 or 4 ounces apiece — flattening them out so that they’re about ¾ inches thick. Again, you want these formed enough that they just stick together. (No hockey pucks!) If you have time arrange them on a plate or tray of some kind, then cover and let rest in the refrigerator for about half an hour. This step is optional, but will help to cohere your patties so that you are less likely to have any epic fails when handling them later.
  • Heat a large skillet or lightly oiled grill to medium-high heat. If you’re doing this on the stovetop, you’ll likely be cooking your salmon burgers in batches, unless you have a really big pan. So, to start, simply heat up 1 tbsp of your cooking fat in the pan until it shimmers.
  • Meanwhile, remove your patties from the refrigerator. Once the skillet or grill is hot, carefully set a few of your salmon burger patties onto your cooking surface; don’t drop the burgers onto the surface, as this can break apart the patties. Give yourself enough room that you can slip a fish spatula in and flip your patties effortlessly.
  • Cook for 2 to 3 minutes per side, flipping just once. Each side should have enough time to develop a nice, golden crust or grill marks. While that’s happening, toast up your burger buns in a dry pan, toaster oven, or on the grill.
  • Set the finished burgers aside on a serving plate until you’ve finished cooking all of the patties. Enjoy immediately, loading up your salmon burger with all your favorite fixings.
