Sago Pudding (Gula Melaka) Recipe | Allrecipes image

Gula Melaka is the sugar from a coconut tree. Combined with coconut milk and poured over a sago pearl pudding, make this dessert a true delight. If palm sugar is hard to find, molasses may be substituted.

10 cups water
7 ounces pearl sago, rinsed and drained
7 ounces palm sugar
½ cup water
2 cups canned coconut milk

Steps:

  • Bring 10 cups of water to a boil in a large pot. Gradually stir in the sago so that it does not clump. Return to a boil, then reduce the heat to low. Cook until the sago turns translucent, stirring occasionally, about 30 minutes. Pour the sago into jelly molds, and refrigerate overnight.
  • In a small saucepan, stir together the palm sugar and water. Bring to a boil, and cook until the sugar has dissolved. Strain through a fine sieve to remove grit.
  • Unmold the puddings, and serve with the coconut milk and palm sugar syrup (gula melaka) separately for each person to pour over their serving.

water
2 ripe large mango (cubed and pick some beautifully cut for topping)
1/4 cup coconut milk
1/4 cup evaporated milk (or coconut milk if you prefer)
Other seasonal fruits (strawberries and kiwi fruit for decorating)
4-6 tbsp. cooked sago
1 cup coconut milk
4 tbsp. cooked sago
2 tbsp. honey

Add the milk and cinnamon stick and microwave, stirringoccasionally, for 12-15 minutes or until the sago is done and transparent. 3. Add half the sugar and the salt, butter and egg yolks tothe sago mixture and mix well. Microwave for 2 minutes and stir. 4. Whisk the egg whites until frothy. Gradually add the restof the sugar and whisk until stiff and all the sugar has dissolved. 5. Carefully fold the egg white mixture into the sagomixture, microwave for another 1-2 minutes and spoon into bowls. 6. Sprinkle with toasted coconut and serve.
