Use this superfast brown butter sauce with classic Potato Gnocchi or any of its variations: Carrot-Potato Gnocchi, Roasted Garlic-Potato Gnocchi or Rye-Potato Gnocchi. Great Italian Recipes

Number Of Ingredients 5

4 tablespoons unsalted butter
10 small sage leaves
Parmigiano-Reggiano cheese
Freshly ground pepper
1 recipe prepared gnocchi

Steps:

  • In a medium skillet, cook the butter with the sage until the butter is fragrant and nutty, about 3 minutes. Add the simmered gnocchi and cook for 1 minute. Sprinkle the gnocchi with grated Parmigiano-Reggiano cheese and freshly ground pepper.

Number Of Ingredients 5

1 stick organic salted butter
14 fresh sage leaves
freshly cracked, to taste black pepper
½ optional lemon
¾ lb or potato gnocchi butternut squash ravioli

Steps:

  • Cut the butter into large pieces and add it to a light-colored pan over medium-low flame.
  • As soon as the butter starts to foam up add the sage leaves and cook together for 3 to 5 minutes.
  • The butter will foam up and start turning brown. Do not touch it and do not stir.
  • The moment the foam subsides it remove from heat. The sage should be crispy by now. Hit it with a squeeze of lemon juice, if desired.
  • Add the cooked ravioli to the butter sage sauce and gently toss to coat. Add a little bit of the reserved pasta water if needed.
  • Serve with black pepper on top and enjoy.
