- Place an egg roll wrapper on a clean surface in a diamond shape and place 2 pieces chocolate, about 1 tablespoon of graham crackers crumbs, and 2 marshmallows. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. Repeat until all egg roll wrappers are used. In a large skillet over medium heat, heat oil (it should reach 1" up the side of pan) until it starts to bubble. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate and season with cinnamon sugar immediately. Serve with melted chocolate, if using.

- Place an egg roll wrapper on a flat work surface with the corners set vertically (pointing up and down like a diamond shape). Moisten all edges of wrapper with water. Spoon 1 tsp graham cracker crumbs horizontally across the center of the wrapper; top with 1 tsp chocolate chips and 5 marshmallows. Fold the bottom corner of the wrapper to the center, over the filling. Fold in left and right sides of wrapper to seal the ends, and roll up. Repeat with remaining wrappers, cracker crumbs, chocolate chips, and marshmallows.
- Preheat air fryer, if necessary, to 400°F. Coat egg rolls all over with cooking spray and arrange in air fryer basket, seam side down. Air-fry at 400°F until well browned and crisp, 6 to 7 minutes. Remove egg rolls from air fryer; sprinkle with powdered sugar.
