- In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in the egg, milk and vanilla. Combine the flour, graham cracker crumbs, baking soda, salt and cinnamon; gradually add to creamed mixture and mix well. Stir in chocolate chips., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° until golden brown, 8-10 minutes. Remove to wire racks to cool., Place 4 cookies bottom side up on a microwave-safe plate; top each with a marshmallow. Microwave, uncovered, on high until marshmallows begin to puff, 10-15 seconds (do not overcook). Top each with another cookie. Repeat.

- Meanwhile, in medium bowl, combine 1/2 cup of the powdered sugar and the marshmallow creme; mix until well blended.
- On surface sprinkled with powdered sugar, knead in remaining 1 1/2 cups powdered sugar. Shape mixture into two 12-inch ropes. Cut ropes into 2-inch pieces. Place 1 piece between 2 cookies; gently press together. Repeat with remaining cookies and marshmallow pieces.

- 1. Heat oven to 350°F (180°C). Grease 8-inch (20 cm) square baking pan. 2. Beat butter and sugar using electric mixer until light and creamy. Beat in egg and vanilla; beat well. Meanwhile, in bowl, stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. Press half of the dough into prepared pan. Bake for 15 minutes. 3. Break chocolate bars into pieces; toss with 1 cup (250 mL) of the butterscotch chips. Sprinkle over baked layer. Top with marshmallows; scatter remaining graham cracker dough over top. Bake for 15 to 20 minutes or just until marshmallows are melted and lightly browned. Cool completely in pan on rack. 4. Melt remaining butterscotch chips in heatproof bowl set over saucepan of simmering water, stirring until smooth; drizzle over top of s’mores mixture. Let stand for about 30 minutes or until top is set. Makes 16 bars. Tip: Alternatively, cut into small squares if preferred.
