2 Filet Mignon or New York Strips
Kosher Salt
Fresh Ground Pepper
1 small pat of butter

Steps:

  • "**This cooks the steaks to a perfect medium rare assuming that you have a steak that is 1 to 1 1/2 inches thick. 1. Place steaks out on the counter 20 minutes before cooking them. This gives them some time to shed refrigerator temperatures and come closer to room temp. (don't worry, we're cooking them at 500 degrees for sufficient time to kill any bacteria) 2. Place a skillet in the oven and preheat to 500 degrees. When the oven reaches 500 degrees, leave it for about 10 minutes. This lets the skillet really soak in t he heat. 3. Remove the skillet and place on the stove top on high heat. Sear the steaks for 30 seconds on each side. This creates a brown crust. 4. Move the steaks (pan and all) into the 500 degree oven. Roast for 2 minutes. Set timer. This is an exact science. 5. After 2 minutes, flip the steaks and roast for 2 more minutes. 6. Remove from the oven, cover the pan with foil for 2 minutes. The steaks continue to cook, but come to a rolling stop on rising temperature. 7. Serve with the very littlest pat of butter on the top of each. HOW NOT TO SCREW IT UP.... * Steaks can vary in thickness, you may not like medium rare, all of these things contribute to how long you need to cook. * If you are cooking with an electric stove top, make sure the burner is already heated to high before moving the pan from the oven. You don't want to lose any heat!!! "

4 8 oz. Filet mignon steaks
6 tablespoon Butter softened
Salt
Pepper
2 teaspoon Fresh parsley chopped

Steps:

  • "1. Preheat the broiler. 2. Prepare the filets by drying them with a cloth or paper towel and rubbing 1/2 tablespoon of butter per steak over the top and bottom. Salt and pepper the filet. 3. Make sure your broiler is on high and that it is good and hot. It should have preheated for at least 30 minutes. Put four oven-safe ceramic serving plates on the bottom rack in the oven when you start to preheat the broiler and through the entire cooking time. Move another rack up to the top so that when you put the filets in they will be about 5-6 inches from the heat. You will have to check the filets periodically to be sure they haven't flamed up. Cook the meat in a broiler pan, turning halfway through cooking time for the following length of time based on your preference: Cooking Chart 4-6 minutes per side - Rare 5-7 minutes per side - Medium Rare 6-8 minutes per side - Medium 7-9 minutes per side - Medium Well 8-11 minutes per side - Well 4. When the meat is done, carefully remove the ceramic plates from the oven. On each of them, place 1 tablespoon of butter. It should sizzle. 5. When the butter has melted, place a steak in the center of the plate. 6. Sprinkle a pinch of the parsley on top of the meat, and another pinch around it onto the butter. 7. Serve the dishes sizzling hot."

"Ruth's Chris Steak House" is such a difficult name to spit out that a restaurant critic suggested it be used as a sobriety test. Surely anyone who could say the name three times fast couldn't possibly be intoxicated. But the hard-to-say name has worked well for the steakhouse chain—it's memorable. The name came from the first restaurant that Ruth purchased in 1965 called Chris Steak House. When she opened a second restaurant with that same name, the previous owner, Chris Matulich, tried to sue her. She won the case, but to avoid future lawsuits, she put her name in front of the original and it became the tongue twister we know today. The delicious creamed spinach served at Ruth's Chris inspired this recipe that has just a hint of cayenne pepper in it for that Louisiana zing. The recipe requires a package of frozen spinach to make it convenient, but you can use the same amount of fresh spinach if you prefer.
