No bake chocolate cookie balls made from chocolate chips, vanilla wafers, pecans and rum.

1 cup semisweet chocolate chips
¼ cup corn syrup
½ cup rum
2?? cups crushed vanilla wafers
½ cup confectioners' sugar
1 cup chopped pecans

Steps:

  • In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, stirring frequently until smooth. Remove from heat and stir in corn syrup and rum. Combine the vanilla wafer crumbs, confectioners' sugar and pecans; stir into the chocolate mixture until well blended. Chill until firm, about 1 hour.
  • Roll dough into 1 inch balls. Refrigerate in an airtight container until serving.

1 package (9 oz) thin chocolate wafer cookies, finely crushed (about 2 cups)
2 cups finely chopped almonds, pecans or walnuts
2 cups powdered sugar
1/4 cup light rum
1/4 cup light corn syrup
1/2 cup powdered sugar

Steps:

  • In large bowl, mix crushed cookies, almonds and 2 cups powdered sugar. Stir in rum and corn syrup. Shape mixture into 1-inch balls.
  • In small bowl, place 1/2 cup powdered sugar. Roll balls in powdered sugar. Store in tightly covered container at least 5 days before serving to develop flavor but no longer than 4 weeks.
