When you want luscious beef, but have limited time, or don't want to bother with the grill, this easy spice-rubbed tenderloin roast recipe is for you.

Number Of Ingredients 9

3 teaspoons kosher salt
1 ¾ teaspoons coarsely ground black pepper
½ teaspoon granulated garlic
½ teaspoon ground dried oregano
¼ teaspoon granulated onion
¼ teaspoon beef bouillon powder
One 2 ½-pound beef tenderloin
silverskin and surface fat trimmed and removed
Olive oil

Steps:

  • Preheat the oven to 475°F
  • In a small bowl, combine all the rub ingredients
  • Brush the tenderloin lightly with a couple of teaspoons olive oil
  • Completely coat the tenderloin with all of the rub, pushing it into every little nook
  • Rub a roasting rack with a teaspoon of oil to keep the meat and rub from sticking
  • Arrange the tenderloin on the rack and place in the roasting pan
  • Insert a meat thermometer into the thickest part of the tenderloin
  • Place the tenderloin in the oven and roast for 10 minutes
  • Reduce the heat to 425°F and continue roasting for 20 to 25 minutes more, until the thermometer registers 130°F for medium-rare
  • Transfer the meat to a cutting board and rest for 10 minutes before slicing

1 tablespoon chili powder
1 tablespoon ground coriander
1 tablespoon packed brown sugar
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
1 (3 to 4 pound) center-cut beef tenderloin roast

Steps:

  • For rub, combine chili powder, coriander, brown sugar, paprika, dry mustard, salt, garlic powder, and cayenne pepper in a small bowl. Sprinkle rub over roast and rub in with your fingers.
  • For a charcoal grill, arrange hot coals around a drip pan. Test for medium-high heat above the pan. Place roast on grill rack over pan. Cover and grill for 60 to 75 minutes for medium-rare (135 degrees F). (For a gas grill, preheat grill. Reduce heat to medium-high. Adjust for indirect cooking. Place roast on a rack in a shallow roasting pan; place pan on grill rack over the burner that is turned off. Grill as directed.)
  • Remove meat from grill. Cover meat with foil; let stand for 15 minutes. Temperature of meat after standing should be 145 degrees F.

  • "Preheat the oven to 425 degrees. Place an empty, heavy-bottomed roasting pan into the oven for 10 minutes. While it is heating, combine 1/4 cup of olive oil, thyme, rosemary, garlic, pepper and salt in a bowl. Rub this dry rub seasoning paste evenly over the beef tenderloin. After 10 minutes, remove the roasting pan from the oven, drizzle the 2 tablespoons of olive oil into the pan, tilt to coat the bottom of the pan, and then add the seasoned fillet. Place in the 425 degree oven for 10 minutes. Turn the fillet over and return to the oven to sear the second side for an additional 10 minutes. Reduce the oven temperature to 375 degrees and cook until it reaches desired doneness using a meat thermometer (an internal temperature of 135 degrees for medium-rare) approximately 15 to 18 minutes additional cooking time. For the wine sauce: In a saucepan, combine wine, shallots, and salt and pepper. Reduce by half. Whisk in thyme and butter just to heat through. When the tenderloin has finished roasting, remove it from the oven and allow to rest for 15 to 20 minutes. Slice the tenderloin into 1/2-inch slices and arrange on a platter. Spoon some wine sauce over the top. This recipe yields 8 to 10 portions.
