Rotisserie chicken is something we all buy on occasion as it's quick and when you remove the skin it isn't too bad for you either. It is great by itself, but over the years I have started using it in a few of my recipes. This not only saves time, it is even better than 'just chicken'. My rotisserie chicken enchiladas is one of those recipes! The rotisserie meat is so tender and perfect for this type of meal, and with my homemade enchilada sauce? YUM. Adults and kids love this one and if you control the cheese, it is healthy yet satisfying. My recipe serves approximately 6 and takes less than one-hour from start to devour. So easy and so DELISH (also gluten free)!

1 rotisserie chicken
1 large sweet onion, chopped
14 -16 small corn tortillas
1 cup shredded cheese, of choice (I like a jack or cheddar mix)
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/2 cup water
1/2 cup light sour cream
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon red chili pepper flakes
1 teaspoon chili powder
1 teaspoon vinegar

Steps:

  • preheat oven to 350 degrees; prep baking dish with cooking spray.
  • remove chicken from bones (discard skin) and chop or shred into small pieces; place meat in a bowl; chop onion and set aside.
  • in a bowl, mix tomato sauce, tomato paste, water, sour cream, pepper, salt, onion powder, red chili flakes, chili powder and vinegar.
  • take each tortilla in your hand, add some chicken, onion and spoonful of sauce and roll it up; place each in cooking dish seam side down; repeat until baking dish is filled.
  • spread remaining sauce over the top of the enchiladas; cover dish lightly with foil and bake 20 minutes.
  • remove from oven, remove foil and top with cheese; bake an additional 15 minutes; garnish with extra sour cream if you like.

2 tablespoons salted butter
1 (8 ounce) package fresh sliced mushrooms
½ cup chopped yellow onion
½ cup chopped bell pepper
1 teaspoon minced garlic
1 (10.75 ounce) can condensed Cheddar cheese soup
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 cup sour cream
1 (4 ounce) can diced green chile peppers
2 tablespoons chopped fresh cilantro, divided
½ teaspoon ground cumin
½ teaspoon chili powder
1 (10 ounce) can green chile enchilada sauce
4 cups shredded rotisserie chicken
2 cups shredded Mexican cheese blend, divided
10 (10 inch) flour tortillas, warmed
1 bunch green onions, sliced
1 medium tomato, diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Add mushrooms, onion, bell pepper, and garlic; saute until tender, 3 to 4 minutes. Add both condensed soups, diced tomatoes, sour cream, green chile peppers, 1 tablespoon cilantro, cumin, and chili powder. Stir until well combined and cook until heated through, about 5 minutes.
  • Transfer 3/4 of the sauce to a bowl and mix in enchilada sauce. Spoon 1/3 of the sauce mixture into the bottom of a large baking pan.
  • Add chicken and 1/2 cup Mexican cheese to the remaining sauce in the skillet. Cook and stir until cheese has melted, 3 to 5 minutes.
  • Fill each warmed tortilla with chicken mixture. Roll up and place seam-side down on the sauce in the baking pan. Pour remaining sauce over the rolled tortillas and top with remaining cheese.
  • Bake in the preheated oven until cheese is bubbly, about 35 minutes.
  • Serve hot, garnished with green onions, tomatoes, and remaining cilantro.

  • Pour 1/2 of the remaining sauce into a rectangular baking dish. Now assemble enchiladas by spooning chicken and mushroom filling into a tortilla, and then rolling up.
