This recipe, buttery and so tender I dare use the word ‘succulent,’ is perfect for any season, any occasion, any guest.

Number Of Ingredients 9

1 5- pound whole chicken
1 lemon (halved)
2 tablespoons unsalted butter (softened)
3 fresh sage leaves (finely chopped)
3 sprigs fresh thyme (finely chopped)
1 sprig fresh rosemary (stem removed, leaves finely chopped)
2 garlic cloves (minced)
½ teaspoon salt
½ teaspoon black pepper

Steps:

  • Preheat your oven to 425 degrees F. Rinse the chicken and pat it dry. Remove the giblets and place the halved lemon inside your bird.
  • In a small bowl, mash the butter with all remaining ingredients. Gently loosen and lift the skin from the meat of the bird.
  • Use your fingers to rub the butter herb mixture into the flesh of the bird- making sure to cover as much area as you can.
  • Return the chicken skin to cover all of the exposed flesh. Roast for 1 hour 30 minutes. Let it rest on a cutting board for 20 minutes before carving.

1 tablespoon extravirgin olive oil
2 teaspoons minced fresh rosemary
2 teaspoons minced fresh sage
¼ teaspoon freshly ground black pepper
2 garlic cloves, chopped
1 (19-ounce) can cannellini beans or other white beans, rinsed and drained
4 (6-inch) pitas, each cut into 6 wedges
Fresh sage sprig (optional)

Steps:

  • Combine first 7 ingredients in a food processor; process until smooth. Serve with pita wedges. Garnish with sage sprig, if desired.

Season with salt and pepper and cook for 2 to 3 minutes, stirring occasionally. In the meantime, pat chops dry with paper towels and season both sides with salt and pepper to taste. Increase heat to medium-high and add chops to skillet, directly on top of herb/garlic mixture. Cover skillet and cook chops undisturbed for 5 minutes. Turn chops, cover pan, reduce heat to medium and cook until just cooked through, about 5 minutes for 3/4-inch thick chops. Adjust time according to thickness of chops. Transfer to plates and serve.
