Number Of Ingredients 6

1/2 cup popcorn kernels
1/4 cup canola oil or grapeseed oil (or other high flashpoint oil)
1 tablespoon plus 1/2 teaspoon fresh minced rosemary
3 tablespoons unsalted butter
1/2 teaspoon kosher or sea salt, or to taste
Fresh cracked black pepper, to taste

Steps:

  • Heat the oil large pot over medium heat. After the oil is hot, add the popcorn kernels and the 1-tablespoon of rosemary, and then shake the pot to gently toss the kernels until they are all coated with oil. Cover with a splatter screen or a lid that is placed slightly ajar to allow the steam to escape.
  • Cook until the popcorn popping frequency slows to several seconds between pops. Remove from heat, allow a minute or two for any final pops, and then pour into a large bowl.
  • In a small saucepan combine the butter and remaining 1/2 teaspoon of rosemary. Melt the butter over medium heat.
  • Drizzle over the popcorn and season with salt and pepper, tossing occasionally as you butter, salt, and pepper the popcorn.

10 cups popped popcorn
1/4 cup butter, melted
3 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper

Steps:

  • Place rosemary on a baking sheet. Bake at 300° for 10 minutes or until crisp. Finely chop rosemary or crush using a mortar and pestle; set aside., Place popcorn in a large bowl; drizzle with butter. Sprinkle with cheese, salt, pepper and rosemary; toss to coat.

  • Warm up your oven to 250 degrees and line a rimmed baking sheet with some parchment paper. Pour the popcorn in one big bowl with tall sides or two medium bowls so that you don’t spill it later while you’re trying to mix. In a small sauce pan over a medium heat melt the coconut oil. When it’s totally clear, add the chopped rosemary, and stir around for about 30 seconds. Add the brown sugar, syrup, and salt and simmer that shit for about 2 ½ to 3 minutes, stirring constantly so nothing burns. You want the sugar crystals to dissolve and a nice constant roll of bubbles through the whole sauce.  Stir in the baking soda and turn off the heat. It will kinda bubble up and turn less see-thru. Don’t worry. Mix it up well and pour it over the popcorn. Stir and stir until all that shit is lightly coated in that kickass caramel. Don’t taste it yet because you will burn the shit out of your tongue. Pour the popcorn on the lined baking sheet in an even layer, turn off the heat for the oven, and throw it in. Leave it in there for 15 minutes to harden up and then serve. Store it in an airtight container or bag but don’t plan on leftovers if you’ve gotta full house. *Save some damn money and pop this yourself.
