1/2 small white onion, finely chopped
3 garlic cloves, minced
2 dried chiles de arbol, crumbled (or 1/2 teaspoon crushed red pepper)
1 teaspoon minced rosemary
1 teaspoon dried Mexican oregano, crumbled
1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
2 pounds boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
Kosher salt
Pepper
8 sturdy 12-inch rosemary sprigs, leaves on bottom half removed
Lime wedges, for serving

Steps:

  • In a large bowl, combine the onion, garlic, chiles, minced rosemary, oregano, lemon juice and olive oil; set aside 1/4 cup of the marinade. Season the chicken with salt and pepper and add it to the bowl. Mix well, cover and marinate for 30 minutes.
  • Light a grill. Remove the chicken from the marinade and thread the pieces onto the rosemary skewers; discard the marinade. Oil the grate and grill the chicken over moderate heat, turning occasionally and basting with the reserved marinade, until golden and cooked through, 15 to 20 minutes. Serve with lime wedges.

600 grams Chicken breasts
rosemary
1 tablespoon honey
5 tablespoons olive oil
1 teaspoon ground paprika
2 tablespoons lemon juice
2 tablespoons freshly chopped Basil
salt
freshly ground peppers

Steps:

  • Rinse the chicken breasts, pat dry and cut into 2 cm (approximatey 3/4-inch) cubes. Thread chicken and rosemary sprigs on wooden skewers. Combine the honey, olive oil, the paprika, lemon juice and basil and brush the chicken with the mixture. Season with salt and pepper, and cook until golden brown on the grill about 8 minutes, turning occasionally.
  • Serve with dips if desired.

I've cooked this on the grill (in a grill basket lined with foil so as not to lose any of the incredible sauce!), on the stovetop and in the oven. Oven and grill are by far the best methods. I serve this over white rice and the flavor is super!! I usually use dried rosemary, but fresh is best! I also cut the sugar in half and use low fat ranch. I also completely omit the salt since I don't feel it needs it. My kids have been eating this since they were 19 months old! When I bake these in the oven I bake them on 450 degrees for about 20-30 minutes. Lean toward 20 so as not to overcook. YUM!
