Zheergen is also called Houttuynia cordata. When I was young, I went to the fields to dig it. It was everywhere. At that time, I didn't have so many seasonings at home, so I mixed it with salt and soy sauce. Now I smell that smell, but it feels unusually fragrant. This is how it feels in different times. Since we grew up eating Sichuan food, we can’t do without chili oil, so we have homemade spicy red oil for a long time at home. This is used to make cold dishes. It’s really amazing. It’s simple and delicious. Today’s cold salad is homemade. Spicy red oil still plays its important role and is very refreshing.

200 g Zhe Ergen
60 grams Peanut kernels (raw)
2 grams salt
1 scoop Chili oil
5 grams Oyster sauce
3 grams sesame oil
5 grams White vinegar

Steps:

  • Put the peanut kernels in the middle of the oven, heat up and down at 120 degrees, roast for 10 minutes, and fry without the oven
  • After the roasted crispy peanuts are cool, peel them and put them in a ziplock bag, roll them into pieces with a rolling pin
  • Wash the root of the folded ear carefully, remove the beard, and break it into small sections
  • Sprinkle a little salt, rub gently with your hands, marinate for a while, then drain off the marinated water
  • Pour some light soy sauce, chili oil, a little sesame oil, oyster sauce, white vinegar in a bowl, add chopped peanuts, mix well and make a juice
  • Pour the mixed juice into the root of the ears and mix well
  • The cold ear root is ready
