A friend sent me this recipe from an old clipping he found in his collection of recipes.

Yield 1 - 8x12 inch cake

Number Of Ingredients 13

½ cup butter, softened
1 cup white sugar
2 eggs
¾ teaspoon root beer extract
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
? cup root beer
½ cup butter, softened
1?½ cups confectioners' sugar
1 teaspoon root beer extract
1 pinch salt
3 tablespoons root beer

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 8x12 inch baking pan.
  • In medium bowl, cream the butter or margarine with the sugar until light. Beat in the eggs and root beer extract.
  • Combine the flour, baking powder and salt. Add the flour mixture to the egg mixture. Beat in the root beer and mix until just combined.
  • Pour batter into the prepared pan and bake at 375 degrees F (175 degrees C) for 30 to 35 minutes. Let cool then frost with frosting.
  • TO MAKE FROSTING: In a medium bowl beat the 1/2 cup butter or margarine, confectioner's, 1 teaspoon root beer extract and pinch salt. Beat in 1 to 3 tablespoons root beer soda to reach desired consistency. Spread onto cooled cake.

This cake has good old fashioned flavor. The kids will love it! For decoration you can sprinkle crushed root beer candies over the top. This cake is best served with vanilla ice cream.

Yield 1 - 10 inch Bundt cake

Number Of Ingredients 6

1 (18.25 ounce) package yellow cake mix
1 (12 fluid ounce) can or bottle root beer
¼ cup vegetable oil
3 eggs
½ cup confectioners' sugar
3 tablespoons root beer

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  • In a medium bowl, stir together the cake mix, 12 ounces root beer, oil and eggs until smooth. Pour batter into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool cake in pan for 15 minutes before inverting onto a wire rack to cool completely. Poke holes in the cake with a skewer at 2 inch intervals. Pour Root Beer Glaze evenly over cake.
  • To make the Root Beer Glaze: combine the confectioners sugar and 3 tablespoons of root beer in a small bowl. Beat until smooth.

Years ago, Gwen and I were on our way home from a road trip to the Canadian Maritimes when we were forced off the highway by some epic construction. But then, in Fall River, Massachusetts, right at the border of Rhode Island, we stumbled across culinary gold: an old gas station converted into a root beer stand. The owner, a retired A&W root beer guy, was behind the counter; all he served was root beer in frosted glasses. Our root beer came with a long lecture about chilling the glass, not the root beer itself (that kills the taste). We sat at a broken-down old picnic table and sipped. I'm all about root beer, and that roadside glassful was the best I ever tasted. This recipe is my stab at bringing that taste to cake—because the only thing better than root beer is root beer plus cake. There's a mad-scientist component to this recipe: when you whisk the baking soda into the molasses and root beer, there's going to be some crazy bubbling up going on, straight out of sci-fi.
