1 tablespoon sherry vinegar
1 clove garlic, halved
¼ teaspoon freshly ground pepper
? teaspoon salt

Steps:

  • Pulse peppers, almonds, parsley, oil, vinegar, garlic, pepper and salt in a food processor until finely chopped together. (This should have a chunky consistency, rather than smooth.)

½ cup plain 2% reduced-fat Greek yogurt

Steps:

  • Combine bell pepper, almonds, and vinaigrette in a mini food processor; process until smooth. Stir bell pepper mixture into yogurt. Serve with vegetables or whole-grain crackers.
