Do not be fooled by this little recipe. So few ingredients but believe me! It-is-a one right after another pop it in your mouth oh I cannot stop eating these. Before you know it, you will have to make another batch for the rest of your family. I got this from my best friend Robin who got it form her Taste of Home Cookbook.

Number Of Ingredients 5

1 cup butter, no substitutes
2/3 cup sugar
1/2 teaspoon almond extract or 1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup jam, for the centers

Steps:

  • Cream butter and sugar
  • Beat in extract
  • Gradually blend in flour
  • Cover and refrigerate for an hour
  • Roll into one-inch balls and place one inch apart on un-greased cookie sheet
  • With the end of a wooden spoon make a indention in the ball and fill with jam
  • I have used Variety of jams and jellies Raspberry being the best! but Apricot is yummmie too, along with apple, blackberry, blueberry the possibilities are endless.
  • Bake at 350 for 14 to 18 minute.

This cookie recipe has been in my mother's family for more years than I've been alive. It's my favorite cookie; my comfort food!

Number Of Ingredients 5

¾ cup butter, softened
½ cup white sugar
2 egg yolks
1?¾ cups all-purpose flour
½ cup fruit preserves, any flavor

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with 1/2 teaspoon of preserves.
  • Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.

Using the end of a wooden spoon handle, make an indentation in the center of each ball. Cover and freeze until firm. Transfer cookie dough balls to a large resealable plastic freezer bag. May be frozen for up to 3 months., To use frozen cookie dough: Place dough balls 2 in. apart on baking sheets coated with cooking spray. Bake at 350° for 17-20 minutes or until set. Remove to wire racks. While warm, fill each with a teaspoonful of preserves. Cool completely.

OLD FASHIONED MOLASSES THUMBPRINT COOKIES | JUST A PINCH ...
This is one of Aunt Annie's recipes from the old country(Germany). These were always in the cookie jar. When I was little my mom and I would visit her and as soon as we got there- I would go right to her pantry and stand in front of the cookie jar until she came looking for me and would give me a cookie. I can still taste the delicious molasses and sugar on my tongue. Great memories; tasty too!
