1 large onion (chopped)
1 stalk celery (chopped)
2 medium potatoes (peeled and cubed)
1/2 cup white wine
4 cups vegetable stock
bay leaf
1 cup red pepper (1 large cored seeded and chopped)
1 cup frozen corn or 1 cup fresh corn
2 lbs rockfish, filets (cubed 3/4 inch)
1/2 teaspoon chipotle chile
salt, to taste
fresh ground pepper, to taste
parmesan cheese, to taste
1/3 cup chopped fresh parsley
1/4 cup olive oil (or enough to cover the bottom of your pot)

Steps:

  • in a large soup pot add olive oil just enough to cover the bottom of the pan. Saute onions and celery until soft.
  • Add all liquid ingredients, garlic and potatoes.
  • Simmer for about 20 minutes or until potatoes are soft.
  • Add all remaining ingredients and bring to a simmer for about 5 additional minutes carful not to over cook fish.
  • Add parsley last and sprinkle with fresh grated parmesan cheese when serving.

2 tablespoons ranch dressing
1 teaspoon seafood seasoning (such as Old Bay®)
1 pound rockfish
1 (5.8 ounce) package hard taco shells
2 cups coleslaw mix
? cup sour cream
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice, or more to taste
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix ranch dressing and seafood seasoning together. Place rockfish on a rimmed baking sheet and brush fish with the ranch mixture.
  • Bake in the preheated oven until fish flakes easily with a fork, about 25 minutes.
  • Meanwhile, mix coleslaw mix, sour cream, cilantro, lime juice, cumin, salt, and pepper together in a bowl. Refrigerate until ready to serve.
  • Reduce oven temperature to 325 degrees F (165 degrees C). Arrange taco shells on a baking sheet and bake until crisp, 6 to 7 minutes.
  • Separate cooked rockfish into 1- to 2-inch pieces. Place slaw inside taco shells and top with rockfish pieces. Serve immediately.

MONKFISH CURRY- BORD BIA
You could make the sauce in advance and store it in the fridge. When you are ready to finish it off, just heat the sauce and add in the fish. It will probably taste even better!

  • To make the sauce: Add a tablespoon of oil to a thick bottomed pan over a medium heat.  Add the onion, garlic and ginger and cook gently for about 15 minutes until the onion softens.  Then add the mustard seeds and cook for another minute or two until they begin to crackle.  

    Add all the spice mix ingredients to the pan and stir them into the mixture. Cook for a couple of minutes then add the chopped tomatoes, coconut milk and curry leaves.

    Bring to a simmer and cook for about 10 minutes. Add the cubes of fish and simmer very gently for 3-5 minutes. Then remove from the heat. Taste and season. 

    To serve: Remove the curry leaves and sprinkle with chopped coriander. Serve immediately with rice or noodles and a salad.
