3 cups flour (bread flour)
1 sachet dried Wheat
0.875 cup lukewarm water
1 pinch salt
3 tablespoons olive oil
2 cups chopped tomatoes (can)
tomato puree
8 Plum tomato
salt
freshly ground peppers
0.5 cup Parmesan (freshly shaved)
olive oil
2 tablespoons balsamic vinegar
1 bunch Arugula

Steps:

  • Mix the flour with the dried yeast in a mixing bowl. Add the salt, olive oil and water and, using the dough hook of your electric mixer, knead to a smooth dough that does not stick to the sides of the mixing bowl. Add an extra 1 – 2 tbsp water if necessary. Cover and put in a warm place to rise for about 45 minutes.
  • Put the tomatoes and tomato puree into a pan and cook for about 3 minutes. Season with salt and pepper and leave to cool.
  • Knead the dough once more on a floured work surface, then divide into 4 pieces. Roll each piece out to a thin circle and place on oiled baking trays.
  • Brush each pizza base with 1 tbsp oil and spread with the tomato mixture.
  • Wash the tomatoes, remove the hard cores at the top and slice, then arrange on the pizza bases. Sprinkle with Parmesan.
  • Bake in a preheated oven (220°C) for 12-15 minutes.
  • Wash the rocket, shake dry and remove the hard stalks. Tear the leaves into bite-sized pieces. Heat 2 tbsp oil in a pan, add the balsamic vinegar and quickly toss the rocket in the hot dressing. Remove from the heat.
  • Scatter the rocket leaves on the hot pizzas and serve.

Cook for 1-2 minutes, making sure to turn the pizza regularly.  Once cooked, retrieve the pizza from the oven and cover with a shower of parmesan shavings and rocket. Finally, season with some crushed black pepper and a drizzle of olive oil, or chilli oil if you prefer!

  • 01 - Put the Hot Water in a pan. 02 - Add Yeast and stir gently and let sit for 5 to 10 minutes, or until the yeast activates by turning into a foam on top of the water. 03 - Now, add the Salt. 04 - Gradually add in the Flour as you stir the mixture simultaneously. You know you have added enough Flour when the mixture becomes too thick to stir. 05 - Knead the dough. 06 - Take the Dough out of the bowl and put it on a clean and well-floured surface ( a marble counter or clean table is best ). 07 - Gather the Dough into a pile and begin pressing it together. Press the heels of your hands firmly into the Dough, pushing forward slightly. 08 - Fold the far edge of the Dough upwards, towards you, and press it into the middle of the ball. Rotate it slightly, too. Repeat this press-fold-turn sequence for the duration of the kneading process. 09 - Let the Dough rise up for 1 hour at room temperature or 5 hours in the refrigerator. 10 - Place on a floured counter and flour the top of the Dough. 11 - Cut the Dough into two round Balls. 12 - Flatten one Ball with your hand until about 2cm - 4cm / 0.7in - 1.5in thick. 13 - Pick up the disk of Dough, and pinch the dough about 1.5cm / 0.5in from the edge. Try and stretch as you pinch, repeat this all around the edge. When the disk of Dough has been stretched enough to start to be floppy, proceed to tossing.
