GLAZED HAM RECIPES | HOW TO MASTER YOUR CHRISTMAS HAM ...

Glazed ham recipes | How to master your Christmas ham ... image

Glaze is essential to the presentation (and flavour) of a perfect Christmas ham. The fundamentals are simple: sugar for sweetness, spices for complexity, and a little acidity to balance it all out. Brush up on the essentials of glazing a ham.

Total Time 2 hours

Prep Time 30 minutes

Cook Time 1 hours 30 minutes

Yield Serves 10 - 12

Number Of Ingredients 1

1 leg ham (about 7kg)

Steps:

  • Preheat oven to 200C. Follow the instructions to make your choice of glaze and set aside.
  • Peel back skin from the ham, being careful not to tear the fat. Use a sharp knife to score around the shank, then detach the skin and reserve (use it to cover leftover ham to help prevent it from drying out).
  • Score the fat (not the flesh) evenly with a small sharp knife, maintaining an even depth all over. You can either score in a crisscross pattern to form diamonds or in parallel lines.
  • Place ham in a large roasting pan with a cup of water, then brush at regular intervals for about 30 minutes, and bake until sticky, golden and warmed through (1-1½ hours). Rest for 30 minutes before carving.

GLAZED MULLED WINE HAM | JAMIE OLIVER RECIPES

Glazed mulled wine ham | Jamie Oliver recipes image

Beautifully finished with a sticky mulled wine-inspired glaze, this is Christmas ham at its finest. Fragrant and full of flavour, it makes the perfect festive centrepiece. Plus, it’ll give you a stash of beyond-delicious leftovers.

Total Time 2 hours 40 minutes

Yield 14 with lots of leftovers

Number Of Ingredients 18

1 x 2.5 kg (approx) higher-welfare unsmoked middle-cut gammon with knuckle
a few sprigs of woody herbs such as rosemary, thyme
3 fresh bay leaves
2 sticks of celery
2 carrots
1 onion
2 cloves of garlic
½ a fresh red chilli
1 tablespoon whole black peppercorns
olive oil
1 x 454 g jar of orange marmalade (no-peel)
175 ml full-bodied red wine such as Rioja
1 star anise
a few cloves plus extra for the pineapple
½ a stick of cinnamon or 1 pinch of ground cinnamon
1 fresh bay leaf
1 clementine
1 x 435 g tin of pineapple rings in juice

Steps:

    1. Take your meat out of the fridge and bring it up to room temperature before you cook it.
    2. Place the gammon in your largest pot, then strip in the woody herbs and add the bay. Roughly chop the celery and carrots, peel and quarter the onion, and squash the garlic cloves, then add it all to the pot with the chilli and peppercorns.
    3. Cover with water, bring to the boil, then pop the lid on and simmer gently for 2 hours, or until the meat is tender, turning it halfway, topping up with water occasionally and skimming away any excess fat.
    4. Preheat the oven to 180°C/350°F/gas 4. Transfer the gammon to a large roasting tray (save a little of the stock for later), then carefully remove the skin and discard, keeping the fat on the meat. Score the fat in a criss-cross fashion, then drizzle with 1 tablespoon of oil. Roast the gammon for 20 to 30 minutes, or until lightly golden.
    5. To make the glaze, spoon the marmalade into a non-stick frying pan on a medium heat, pour in the red wine and bring to a simmer, stirring occasionally.
    6. Add the spices and bay, strip in the clementine zest using a speed-peeler, then pour in the pineapple juice, saving the fruit for later. Allow to bubble away and reduce by half, then switch off – it should be thick and syrupy.
    7. When the roasting time’s up, take the tray out of the oven, then arrange pineapple rings over the gammon, securing them with a few cloves. Arrange the rest of the pineapple in and around the tray, then pour the glaze over the meat.
    8. Spoon ½ a ladleful of the gammon stock into the pan you used to make the glaze, scrape up all the sticky bits from the bottom and pour into the tray, ensuring all the gammon and pineapple is coated. Roast for a further 20 minutes, or until beautifully glazed, basting with the glaze every 5 minutes.
    9. Remove the glazed ham to a serving platter, ready to slice hot, cold or at room temperature. Pour any remaining glaze from the tray all over the ham, and arrange the pineapple slices around it.

    1. Preheat the oven to 160°C/325°F/gas 3.
    2. Place the ham in a roasting pan. Peel the onion and cut into wedges, then add to the pan with the peppercorns and bouquet garni.
    3. Add water until it comes halfway up the side of the pan. Cover the ham with foil (making a tent to allow steam to circulate). Bake for 1½ hours or until pink and cooked through, then remove from the oven and cool for 30 minutes, leaving it covered.
    4. While it’s still warm, you will need to carefully remove the skin, keeping the fat attached to the ham. With a sharp knife, score the ham by making diagonal cuts across the leg.
    5. To make the jerk seasoning, peel and chop the garlic and shallots, deseed and chop the scotch bonnets and finely chop the chives. Blend all the ingredients with a decent pinch of sea salt in a food processor until smooth.
    6. Rub the jerk seasoning all over the ham and scored fat, cover in clingfilm and pop in the fridge overnight, preferably 24 hours.
    7. Preheat the oven to 180°C/350°F/gas 4.
    8. Combine the glaze ingredients in a bowl. Remove the ham from the fridge, scrape off the excess seasoning and bake for 1 hour.
    9. Remove from the oven, brush with the glaze, then continue cooking the ham for another 30 to 40 minutes, basting with the glaze every 10 minutes until crisp, golden and sticky.

  • Tips on How to Cook a Ham in the Oven:•Fully cooked ready-to-eat ham, whether it's bone-in, boneless or even spiral cut, can be served cold or warmed. •If you're wondering how long to bake a ham, we suggest about 10 to 12 minutes per pound in a 325°F oven. For a fully cooked (ready to eat) ham, heat until internal temperature reaches 145°F. For a fresh ham that must be cooked before serving, heat until internal temperature reaches 165°F. •Place ham in a roasting pan and bake in the lower half of the oven, covered with foil to retain moisture. To keep ham juicy, you can add about 1 cup of water, stock, or even apple juice to the pan.•Before heating, brush ham with your favorite glaze—use only half and save the rest for basting during last 30 to 45 minutes of baking.•Not sure how much ham to buy to feed the family? Go with about 3/4 pound per person for a bone-in ham, or 1/2 pound per person for boneless.
