1/2 urkey,3-4kg
2 tbsp olive oil
2 medium onions
6 large carrots
one bunch fresh rosemary
3 large garlic cloves unpeeled
1/2 upwhite wine (optional)
1/2 upchicken broth (1 cup if omitting wine)
For rub
1 tbsp salt
1/2 tbsp pepper
1/2 tbsp garlic powder
1 tbsp ground sage
1/2 tbsp ground rosemary
1/2 tbsp ground thyme

Steps:

  • "Preheat your oven to 350 degrees. Rub both sides of the turkey with olive oil. Combine all spices to make a rub. Sprinkle generously onto both sides of the bird. Slice your onions roughly into 1-inch rounds. Peel and wash the carrots. Pour wine and chicken broth into your roasting pan. Line the bottom with onions, whole carrots, unpeeled garlic cloves, and rosemary sprigs. Place the bird on top of all the vegetables, cut side down. Cook the turkey for 1 ½ - 2 hours until cooked through. Test for doneness with a meat thermometer. Turkey should reach an internal temperature of 170°F (77°C) in the breast and 180°F (82°C) in the thigh. Remove turkey from the oven and let it rest for 15 minutes before carving."

This is one of my favorite ways to have turkey. I bought a turkey half at the grocery store, and this was what I did... It was really tasty, and my son and I both loved it!

1/2 whole turkey
1/4 cup breadcrumbs
Shake-n-Bake, for chicken, enough to cover turkey
cooking spray
Tony Chachere's Seasoning, to taste
fresh ground pepper, to taste

Steps:

  • Preheat oven to 350.
  • Wash off the turkey, and place on a lg. cookie sheet.
  • Sprinkle bread crumbs oner top of turkey.
  • Sprinkle Shake N Bake over crumbs.
  • Spray with cooking oil spray all over the top.
  • Sprinkle with Tony Chachere's seasoning and pepper.
  • Bake for 2 hours.
  • Cut into pieces and slice breast, and serve.

  • Carefully tilt turkey so juices from inside large cavity run into roasting pan. Transfer turkey to a platter (do not clean roasting pan) and let stand 30 minutes (temperature of thigh meat will rise to 180°F). Cut off and discard string from turkey. VARTIATIONS: For a stuffed turkey: Twelve cups of stuffing will fill both cavities and leave you extra to bake separately. Just before roasting, spoon room-temperature stuffing loosely (stuffing expands as it cooks) into the neck (smaller) cavity. Fold the neck skin underneath the body and secure with a small metal skewer. Then loosely fill the body (larger) cavity, and tie drumsticks together. If you don't want any stuffing to spill out, cover the opening with a slice of fresh bread, tucking it inside the cavity before tying the drumsticks. Follow roasting directions above. (Timing for a stuffed bird may be slightly longer, but start checking the temperature at 1¾ hours.)
