This is a simple, flavour-packed side dish, perfect to go with roast meats. Potatoes are diced and partly cooked. Tossed with a delicious herb-infused oil mixture and roasted until golden, these gorgeous potatoes will become a firm family favourite - give it a go!

2 pound Potato
1/4 cup Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
2 teaspoon Dried Mixed Herbs
to taste Salt and Pepper

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C).
  • In a measuring cup mix Olive Oil (1/4 cup), Garlic Powder (1 teaspoon), Onion Powder (1 teaspoon), and Dried Mixed Herbs (2 teaspoon). Season with Salt and Pepper (to taste) and mix well together.
  • Chop the Potato (2 pound) into little pieces and partially cook them. You can boil them on the stove for 5 to 10 minutes until they are still firm and not cooked through yet.
  • In a roasting pan, line with non-stick baking paper and put the partially cooked potatoes on the pan. Drizzle the mixed seasoning over them and mix well with a wooden spoon.
  • Put it into the preheated oven and bake for about 1 hour or until they are crispy on the outside and soft on the inside.

½ pound mini potatoes
2 teaspoons extra-virgin olive oil
2 teaspoons dry Italian-style salad dressing mix
salt and ground black pepper to taste

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Wash and dry potatoes. Trim edges to make a flat surface on both ends.
  • Combine extra-virgin olive oil and salad dressing mix in a large bowl. Add potatoes and toss until potatoes are well coated. Place in a single layer into the air fryer basket. Cook in batches if necessary.
  • Air fry until potatoes are golden brown, 5 to 7 minutes. Flip potatoes and air fry for an additional 2 to 3 minutes. Season with salt and pepper.
