1/4 cup butter
3 cups small fresh broccoli florets (from 12-oz package)
1/2 cup chopped onion
1 tablespoon finely chopped garlic
1 cup Progresso™ chicken broth (from 32-oz carton)
2 teaspoons Dijon mustard
1 container (8 oz) chive & onion cream cheese spread
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups chopped deli rotisserie chicken
1 package (10 oz) frozen white rice, cooked as directed on package (about 1 1/2 cups)
2 cups coarsely crushed Ritz™ crackers (about 34 crackers)
Chopped fresh chives, if desired

Steps:

Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
In 12-inch nonstick skillet, melt 2 tablespoons of the butter over medium heat. Add broccoli and onion; cook and stir 3 to 4 minutes or until crisp-tender. Stir in garlic; cook 30 to 60 seconds or until garlic is fragrant.
Stir in chicken broth, mustard, cream cheese spread, salt and pepper. Cook and stir 3 to 5 minutes or until mixture is smooth. Stir in chicken and rice; transfer to baking dish.
In small microwavable bowl, microwave remaining 2 tablespoons butter uncovered on High 20 to 30 seconds or until melted. Stir in crackers; sprinkle on top of casserole. Bake 20 to 25 minutes or until bubbly around edges and heated through. Garnish with chives.

Ingredients

2 (10 ounce) packages frozen broccoli florets
1/2 lb Velveeta cheese, cubed
1/2 cup margarine or 1/2 cup butter, divided
24 Ritz crackers

Steps:

Cook and drain the broccoli.
Place broccoli in a buttered, 2 quart casserole baking dish.
Over low - medium heat, melt 1/4 cup of margarine or butter and Velveeta, until smooth and pour on top of the broccoli.
Crush 1 tube of Ritz crackers and mix all ingredients together, in the casserole dish.
Melt rest of margarine or butter and pour over the top and bake in a pre-heated 350 degree oven for 10-15 minutes .

Preheat oven to 350 degrees. Place crackers into a large ziploc bag and crush slightly, leaving some large chunks. Set aside.Plunge broccoli into boiling water and allow to boil for 1 minute. Strain and set aside.Cut Velveeta into chunks. Throw into a large pot with milk, cream, salt, pepper, and cayenne. Melt, stirring occasionally, until totally smooth. Stir in Dijon if using.Add broccoli to cheese sauce, then add half the cracker crumbs. Stir to combine, then pour mixture into a buttered 9 x 13 inch baking dish. Top with remaining cracker crumbs, then sprinkle the top generously with black pepper. Bake for 15 to 20 minutes, or until top is golden brown and casserole is bubbly.
