Ingredients

Cookies:
1 stick butter, softened
2 cups sugar
2 eggs
1 (15-ounce) container whole milk ricotta cheese
3 tablespoons lemon juice (about 1/1.5 lemons)
1 lemon, zested
2 1/2 cups flour
1 teaspoon baking powder

Glaze:
1 1/2 cups powdered sugar
3 tablespoons lemon juice (about 1/1.5 lemons)
1 lemon, zested

Steps:

Preheat oven to 375 degrees
Combine butter and sugar until light and fluffy, about 4 minutes
Add eggs, one at a time, until incorporated
Add ricotta cheese, lemon juice, and lemon zest and beat to combine
Stir in the flour and baking powder
Line baking sheets with parchment paper and scoop cookies onto sheet using scoop or spoon
Bake for 14-16 minutes or until edges are firm and bottoms are browned
Let cookies cool completely and prepare glaze
Combine powdered sugar, lemon juice, and lemon zest and stir until smooth
Glaze each cookie then let sit until glaze firms
Keep refrigerated and serve chilled.
