Easy, different, very flavourful pasta dish. This is good served warm as a side, or cold as a salad. This is perfect for potlucks or picnics, it's very transportable and doesn't need to be reheated.

Number Of Ingredients 11

250 g rice noodles
2 leeks (white part and a bit of green part, chopped)
6 carrots (peeled and grated)
1 head broccoli (flowerets only, chopped)
1 tablespoon butter
2 tablespoons oil (I used grapeseed or extra virgin olive oil)
1 tablespoon curry powder
1 tablespoon garlic powder
2 tablespoons white wine (use water , vegetable or chicken broth, if you do not have)
1 teaspoon kosher salt
salt and pepper

Steps:

  • Boil some water, turn heat off, add Rice Sticks.
  • Let sit in water for about 3-4 minutes, or until done and strain.
  • Heat wok, add oil and butter until melted.
  • Add curry powder, garlic powder and kosher salt.
  • Add leeks and toss for about 1 minute.
  • Add carrots and toss for about 1 minute.
  • Add broccoli and toss for about 1 minute.
  • Add wine, (or other liquid) and put the lid on wok or pan.
  • Let everything simmer/steam on med.
  • heat for 2 minutes.
  • Remove lid, add Rice sticks, toss and put in serving bowl.
  • Season with salt and pepper to taste, and I also usually add a little extra virgin olive oil at this point, and give it a last toss before serving.
  • Enjoy!

This recipe makes delicious rich & delicate waffles, in the form of waffle sticks or more traditionally in your waffle iron.

1 1/2 cup All-Purpose Flour
2 teaspoon Baking Powder
1/2 teaspoon Salt
3 tablespoon Granulated Sugar
3 Egg
1 cup Milk
4 tablespoon Unsalted Butter
2 teaspoon Pure Vanilla Extract
to taste Powdered Confectioners Sugar

Steps:

  • Sift All-Purpose Flour (1 1/2 cup), Baking Powder (2 teaspoon), Salt (1/2 teaspoon) and Granulated Sugar (3 tablespoon) into a large bowl.
  • Put the yolks of the Egg (3), Milk (1 cup), Unsalted Butter (4 tablespoon), and Pure Vanilla Extract (2 teaspoon) into another bowl and beat well.
  • Lightly stir in the flour mixture until just about blended.
  • Place the egg whites into a clean bowl and beat with a wire whisk, or electric mixer, until stiff peaks form. Gently fold the beaten egg whites into the batter with a large spoon.
  • Lightly brush the inner surface of each pan with a small amount of melted butter or neutral oil. Preheat the outside of both pans on the stove over medium heat.
  • Fill the indentations of one pan just until the batter is level and attach the other preheated pan by the handy hinge. Flip the whole thing over halfway through cooking.
  • The waffles should take about two to three minutes per side, depending on your stove. The interior surface is nonstick, so the waffles should release from the pan without a problem.
  • Sprinkle with a dusting of Powdered Confectioners Sugar (to taste) if desired. Serve immediately with maple syrup.
