What could be better than homemade vanilla ice cream on a hot day?

3/4 cup sugar
1 pint (2 cups) Land O Lakes® Half & Half
1/4 teaspoon salt
4 large Land O Lakes® Eggs
1 pint (2 cups) Land O Lakes® Heavy Whipping Cream
1 tablespoon vanilla

Steps:

  • Combine sugar, half & half and salt in 2-quart saucepan. Cook over medium heat, stirring constantly, 3-4 minutes or until sugar is dissolved.
  • Beat eggs in bowl until light and lemon-colored. Gradually stir small amount of hot half & half mixture into beaten eggs with whisk. Slowly pour egg mixture into remaining half & half mixture in saucepan, whisking constantly.
  • Reduce heat to low. Cook, stirring constantly, 7-10 minutes or until half & half mixture reaches 160°F and is thick enough to coat back of metal spoon. (Do not boil.) Pour into clean bowl. Cover; refrigerate 1-2 hours or until chilled.
  • Stir whipping cream and vanilla into chilled half & half mixture with whisk. Freeze in ice cream maker, according to manufacturer’s instructions, until desired consistency. Serve immediately or store frozen in freezer container with tight-fitting lid.

2 cups cold fat-free milk
1 package (3.4 ounces) instant vanilla pudding mix
4 medium peaches, peeled and chopped
2 cans (12 ounces each) fat-free evaporated milk
1 can (14 ounces) sweetened condensed milk
1/2 cup sugar
1/4 cup lemon juice
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/8 teaspoon salt
1 carton (8 ounces) fat-free frozen whipped topping, thawed

Steps:

  • In a large bowl, beat milk and pudding mix on low speed for 2 minutes. Beat in the peaches, evaporated milk, condensed milk, sugar, lemon juice, extracts and salt. Beat in whipped topping just until combined. , Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Transfer to freezer containers; freeze for 2-4 hours before serving.
