4 sheets Rice paper
3.5 ounces Snap pea
2 Chicken breasts
salt
freshly ground Black pepper
1 tablespoon butter
1 tablespoon white wine vinegar
3 tablespoons olive oil
0.5 bunch scallions (cut into thin strips)
1 carrot (cut into thin strips)
1.75 ounces enokitake Mushrooms
Basil

Steps:

  • Soak the rice paper between damp tea towels.
  • Blanch the mangetout in salted boilingwater for 3 minutes. Drain, rinse in cold water and drain thoroughly.
  • Season the chicken breast fillets with salt and pepper. Heat the butter and fry the chicken breasts over a medium heat for about 5 minutes on each side. Remove and slice thinly at an angle.
  • Mix together the vinegar and oil and season to taste with salt and pepper.
  • Fold the sheets of rice paper in half to form a triangle. Divide the vegetables, mushrooms, chicken and basil leaves between each triange. Sprinkle with the dressing and carefully fold the ends round to make a cone.

Rice papers are handy wrappers, commonly used in Vietnamese cooking. You can buy them at Asian markets or large supermarkets. They keep indefinitely on your pantry shelf.

2 teaspoons sesame seeds
3 tablespoons reduced-sodium soy sauce
2 tablespoons finely chopped scallions
1 tablespoon chopped fresh cilantro, plus 12 sprigs
2 teaspoons rice-wine vinegar
2 teaspoons finely chopped fresh ginger
1 teaspoon sugar
4 8-inch rice papers, (see Ingredient note)
1 pound salmon fillet, about 3/4-inch-thick, skin removed, cut into 4 portions
Freshly ground pepper, to taste
2 teaspoons canola oil

Steps:

  • Toast sesame seeds in a small dry skillet, stirring, over medium heat, until golden and fragrant, 2 to 3 minutes. Stir together soy sauce, scallions, chopped cilantro, vinegar, ginger, sugar and the sesame seeds in a small bowl.
  • Fill a large bowl with very hot water. Working with one sheet at a time, dip rice papers in water until completely softened, about 10 seconds. Place on a towel to drain. Arrange 3 cilantro sprigs attractively in the center of each rice paper. Season salmon with pepper and place over the cilantro sprigs. Fold the rice paper over the salmon to enclose it.
  • Heat oil in a large nonstick skillet over medium-high heat. Place the salmon packages in the skillet, seam-side down, and cook for 1 1/2 minutes. Turn and cook for 1 1/2 minutes more. Remove from the heat and let stand, covered, for 2 minutes then serve with the dipping sauce.

Soak a rice paper in the water just until pliable, 30-45 seconds (depending on thickness of rice papers); remove, allowing excess water to drip off., Place on a flat surface. Layer vegetables and noodles down the center; top with peanuts and, if desired, cilantro. Fold both ends over filling; fold one long side over the filling, then roll up tightly. Place seam side down on a serving platter. Repeat with remaining ingredients., Cover with damp paper towels until serving. Cut rolls diagonally in half; serve with peanut sauce.
