Yield 15 small Rice Krispies(R) trees

Number Of Ingredients 14

6 cups crispy rice cereal (such as Rice Krispies®)
? cup chopped dried cranberries
? cup chopped dried apricots
1 small orange, zested and juiced
3 tablespoons unsalted butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground cloves
1 (10 ounce) package large marshmallows
? cup dried apricots, or as needed
? cup dried cranberries, or as needed
½ cup chopped white chocolate
1 tablespoon unsalted butter

Steps:

  • Mix crispy rice cereal, cranberries, and apricots together in a large bowl. Toss gently to combine and set aside.
  • Combine orange zest and juice, butter, vanilla extract, cinnamon, salt, and cloves in a large saucepan over low heat. Cook until butter is melted and stir to combine. Add marshmallows all at once; cook, stirring constantly, until fully melted, 3 to 5 minutes.
  • Quickly pour the marshmallow mixture over the cereal mixture and toss to combine, making sure cereal is thoroughly coated.
  • Lightly butter or oil clean hands and a 1/3 cup measure. Scoop out 1/3 cup of the cereal mixture and press firmly into a tree shape. Flatten the bottom of the tree and set aside. Continue making trees, re-buttering your hands as needed, until all the mixture is used up. Allow trees to cool and harden for 15 to 30 minutes.
  • Cut whole apricots into star shapes, using a sharp paring knife or small cookie cutter. Set the scraps aside for extra decoration. Chop dried cranberries for extra decoration.
  • Combine white chocolate and butter in a small heat-proof bowl. Microwave until chocolate is melted, about 30 seconds. Stir to combine. Pour white chocolate into a piping bag.
  • Pipe white chocolate into decorative patterns all over the trees, covering the very tops to adhere the apricot stars. Use remaining white chocolate to adhere extra chopped apricots and cranberries as desired. Reheat chocolate in the microwave for 10 seconds if it begins to harden. Allow chocolate to fully harden on the trees before serving.

Nothing says it's the holiday season quite like homemade Christmas Rice Krispie Treats. The flavor of these festive treats is both sweet and a little salty. Decorate these Rice Krispie Christmas Trees with different sprinkles and patterns for variety, or keep to one pattern and simple colors for a more uniform look. The options are endless, and the trees are sure to stand out in any holiday spread!

1 (12-oz.) pkg. green vanilla candy coating disks (such as Wilton Candy Melts)
3 cups crisp rice cereal (such as Rice Krispies)
Green food color spray (such as Wilton Color Mist)
8 (4-in.) sugar cones
Candy sprinkles

Steps:

  • Melt candy coating disks according to package directions. Meanwhile, spread cereal in an even layer in a small rimmed baking pan. Coat cereal with color spray, stirring gently between coatings, to cover as much cereal surface as possible.
  • Spread a thin layer of the melted candy coating over 1 sugar cone using a spoon or offset spatula. Roll cone in tinted cereal to coat, gently patting to adhere. Stand cone up on a large sheet of parchment paper. Repeat process with remaining 7 cones. Let cones stand until coating sets, about 10 minutes. (Spray cones lightly with color spray if needed to even out green coloring.)
  • Spoon 1/4 cup of the remaining melted candy coating into an unsnipped piping bag (and not fitted with a piping tip); microwave on MEDIUM (50%) until candy re-melts, about 30 seconds. Snip a small hole in corner of piping bag. Pipe small dots onto cone trees; adhere candy sprinkles to dots as desired. Store, covered, at room temperature up to 3 days.

  • Grease or spray a 9x13-inch pan and set aside. In a large pan, melt butter and marshmallows over medium-low heat, stirring constantly. Once it almost smooth and melted, add green food coloring little by little until you achieve your desired tree color. Once completely smooth and perfectly green, remove from heat and stir in Rice Krispies. Continue to stir until all the cereal is coated. Press evenly into prepared pan (I always spray my hand with nonstick cooking spray to do this, but you can also use a piece of wax paper). Immediately sprinkle with sprinkles. Let cool for at least 30 minutes. Cut one cut down the middle of the pan (the long way). Then, cut each of those rows into triangles (you should have 4 scraps leftover, one at each side of each row).
