low-fat sour cream

6 oz.

pepper jack cheese, coarsely grated

medium onion, chopped

poblano pepper, seeded and cut into 1/4-inch pieces

cloves garlic, finely chopped

10-ounce can diced tomatoes with green chiles

16-oz can fat-free refried beans

1 c.

frozen corn, thawed

2 c.

tortilla chips

Steps:

  • Heat oven to 425°F. Heat 2 teaspoons oil in medium saucepan on medium. Add rice and cook, stirring, 1 minute. Add 41/2 cups water and 1/4 teaspoon salt and bring to a boil. Reduce heat and simmer until liquid is absorbed and rice is tender, 15 to 20 minutes. Fold in sour cream and 1 cup cheese.  While rice is cooking, heat remaining tablespoon oil in large skillet on medium. Add onion and cook, covered, stirring occasionally, 6 minutes. Add poblano and cook, covered, stirring occasionally, until vegetables are tender, 5 to 6 minutes more. Stir in garlic and cook 1 minute. Add tomatoes and their juices and then beans and corn and cook, mixing to combine until heated through, about 3 minutes. Stir in garlic and cook 1 minute.
