Spicy Chinese style ground beef rice bowl.

1 cup ground beef
2 tbsp. cooking oil
2 green onion ( , finely chopped)
1 inch root ginger ( , finely chopped)
1/2 tsp. salt
1 tbsp. sesame oil
6 to 8 fresh long green chili peppers ( , cut into small circles(depending on how spicy you want it to be))
2 fresh red chili peppers ( , cut into small circles)
1/2 middle size red onion ( , finely chopped)
2 garlic cloves ( , finely chopped)
1/2 tsp. salt or as needed
1 tbsp. light soy sauce
1/2 tsp. black vinegar
Freshly steamed rice for serving

Steps:

  • Mix ground beef with the marinating ingredients well in a large bowl. Set aside to rest for around 15 minutes.
  • Prepare all the other side ingredients during this process.
  • Heat up around 2 tablespoons of cooking oil in a deep pan or wok; add ground pork to fry until the peek color disappears. And break them into smaller particles during the process. Transfer out and leave the oil.
  • Add garlic, red onion to fry until aroma. And add red peppers and green peppers to fry for around 1 or 2 minutes. Longer cooking time can reduce the spiciness of the final dish.
  • Return fried ground beef again. Add soy sauce, salt and black vinegar. Fry for around 1 or 2 minutes.
  • To serve, pour the ground chili beef on your freshly steamed rice. And serve hot!

12 ounces boneless beef sirloin
6 green onions
2 1/2 cups short-grain rice
cold water
3 cups water
1/2 teaspoon salt
1/4 cup mirin
1/4 cup soy sauce

Steps:

  • Cut beef into 1/8 inch thick slices.
  • Cut slices into strips about 1 inch wide and 2 or 3 inches long.
  • Cut green onions crosswise into 1 inch lengths.
  • Reserve.
  • Wash rice with cold water.
  • Cook rice with 1/2 teaspoon salt and 2 3/4 cups of water.
  • About 10 minutes before serving, heat remaining 1/4 cup water, the mirin and soy sauce to boiling over medium high heat.
  • Add beef and boil until beef reaches desired doneness.
  • Add green onions and boil 30 seconds.
  • Remove from heat.
  • Divide rice among 4 individual serving bowls.
  • Place equal amounts of beef and onions over rice in each bowl.
  • Ladle equal amounts of cooking liquid into each bowl.
  • Serve immediately.
  • Note: I sometimes add a litte ginger, garlic, pea pods, green beans (cooked), bamboo shoots or water chestnuts to the mix.
