RHUBARB CUSTARDS RECIPE | MARTHA STEWART

Rhubarb Custards Recipe | Martha Stewart image

This dessert couldn't be simpler. Unlike many custards, it doesn't require a hot-water bath. Shallow gratin dishes, shown here, allow the rhubarb to spread out and cook evenly. You can also use 4-inch ramekins (2 inches deep). Simply give the rhubarb a stir halfway through step 1.

Total Time 1 hours 30 minutes

Prep Time 10 minutes

Yield Makes 6

Number Of Ingredients 8

Unsalted butter, for dishes
3/4 cup sugar, plus more for dishes
12 ounces rhubarb, trimmed and cut crosswise 1/4 inch thick
1 cup whole milk
1/2 cup heavy cream
1/3 cup all-purpose flour
2 large eggs, plus 1 large egg yolk
Coarse salt

Steps:

  • Heat oven to 350. Butter six 5 1/2-inch gratin dishes (1 inch deep), and dust with sugar; arrange on a rimmed baking sheet. Toss rhubarb with 1/4 cup sugar, and divide among dishes. Cover each first with parchment and then with foil, and bake until rhubarb is just beginning to release liquid and soften, about 30 minutes. Leave oven on.
  • Puree milk, cream, flour, eggs and yolk, remaining 1/2 cup sugar, and 1/2 teaspoon salt in a blender until smooth. Divide mixture evenly among dishes. Bake, uncovered, until just set, 22 to 24 minutes. Let cool for 20 minutes.

RHUBARB AND CUSTARD RECIPE | DELICIOUS. MAGAZINE

Rhubarb and custard recipe | delicious. Magazine image

It’s a retro pudding, it’s nursery food, it’s a classic rhubarb and custard recipe. Sharp rhubarb is the perfect foil for sweet, creamy custard in this dessert recipe.

Provided by delicious. magazine

Total Time 35 minutes

Prep Time 10 minutes

Cook Time 25 minutes

Yield Serves 4

Number Of Ingredients 8

Juice of 2 oranges
2 tbsp golden caster sugar
1kg rhubarb, trimmed, split down the middle and cut into lengths
For the extra creamy custard
568ml carton double cream
¼ vanilla pod, seeds scraped and set aside
6 medium egg yolks
3 tbsp golden caster sugar

Steps:

  • Put the orange juice into a pan and add the sugar and rhubarb. Stir it all together just once and bring to a simmer. Once simmering, cover and remove from the heat. Set aside, still covered, for at least 10 minutes, after which time the rhubarb will be tender and ready to eat, hot or cold.
  • Make the custard. Heat the cream with the vanilla pod and allow it to simmer for a good 5 minutes. Meanwhile, beat the egg yolks, sugar and vanilla seeds until pale and thick. Pour the hot cream into the egg mixture, strain and discard the pod, and whisk together.
  • Now return the strained custard to a clean pan and put over a low heat. You can do this over a bain-marie or, if the bottom of the pan is nice and thick, over a very gentle heat. Stir the custard constantly with a wooden spoon, keeping the heat gentle and the custard moving or it will curdle and look like scrambled egg. The custard should be ready after about 8 minutes, when it will coat the back of a wooden spoon.
  • When it’s ready, remove it from the heat and serve immediately with the rhubarb.

  • To make compote, put rhubarb, sugar and 1tbsp water into a large pan. Stir over a medium heat for about 10min until fruit is very soft. Remove from heat. Spoon off 2tbsp of cooking liquid; mix with cornflour in a cup. Pour stewed fruit and cornflour mix into a food processor; purée until smooth, or use a stick blender. Pour back into pan; boil for 2min. Spoon into base of 6 x 125-150ml (4-5fl oz) ramekins; chill.

Meanwhile, in a medium bowl, use a balloon whisk to mix sugar and cornflour with 4tbsp of milk to make a smooth paste. Whisk in egg yolks until well combined. Pour remaining milk and the cream into a large non-stick pan with vanilla pod and seeds. Bring to boil until first few bubbles are rising. Take off heat.

Slowly pour hot milk into bowl of egg mixture, whisking until well combined. Discard vanilla pod. Transfer to a clean pan and cook over a low heat, stirring with a wooden spoon for about 15min until mixture is consistency of natural yogurt. Temperature needs to be hot enough to cook and thicken eggs and cornflour but not so hot that eggs scramble, so keep adjusting it. If eggs do begin to scramble, whisk with a balloon whisk until smooth.
