This soup is sooo much better than the canned stuff! Years ago, I made this with fresh tomatoes for canning. I discovered I could make it up for lunch just using small amounts. I have changed the recipe by adding chicken stock and it makes the soup taste like it's cooked a long time.

2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper (any color)
1/2 cup chopped celery
1 (15 ounce) can tomatoes (stewed or diced)
1/2 cup tomato sauce
1 cup chicken stock
1 bay leaf
salt and pepper
1 tablespoon sugar (optional)

Steps:

  • Heat the olive oil over med heat, add onions, bell pepper and celery and saute until soft (7-10 minutes).
  • Add tomatoes, sauce, chicken stock, bay leaf, salt & pepper and sugar.
  • Bring to a boil, reduce heat and simmer 10 minutes.
  • If soup is too thick, add water to correct consistency.
  • Serve with favorite grilled cheese sandwiches!

Creamy Tomato Soup with Buttery Croutons Recipe - Food & Wine image

This comforting, creamy tomato soup relies on pantry staples, such as canned whole tomatoes, garlic, onion, and extra-virgin olive oil. Freshly made brown butter croutons add contrasting crunch and a touch of richness. Best of all, you can enjoy a bowl of this soup in just 30 minutes.

2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 medium onion, very thinly sliced
3 garlic cloves, smashed
5 cups canned whole tomatoes in their juice (from three 14-ounce cans)
1 cup water
2/3 cup heavy cream
1 tablespoon sugar
1/4 teaspoon crushed red pepper
1/4 teaspoon celery seed
1/4 teaspoon dried oregano
Salt and freshly ground pepper
Four 3/4-inch-thick slices of white country bread, crusts trimmed, bread cut into 3/4-inch dice

Steps:

  • In a large saucepan, melt 1 tablespoon of the butter in 1 tablespoon of the olive oil. Add the sliced onion and smashed garlic and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the tomatoes and their juice, the water, heavy cream, sugar, crushed red pepper, celery seed and oregano and season with salt and pepper. Bring the soup to a boil over high heat, breaking up the tomatoes with the back of a spoon. Reduce the heat to moderate and simmer for 10 minutes. 
  • Meanwhile, in a small skillet, cook the remaining 1 tablespoon of butter over moderately high heat until it begins to brown, about 1 minute. Scrape the browned butter into a medium bowl. Add the olive oil to the skillet. Add the diced bread and cook over moderately high heat, stirring occasionally, until it is slightly browned, about 6 minutes. Transfer the bread to the browned butter and toss well. 
  • Working in batches, transfer the tomato soup to a blender and puree until smooth. Return the soup to a clean pot and rewarm the soup if necessary. Season the soup with salt and pepper. Ladle the soup into bowls and serve with the croutons.

  • 1. Heat the olive oil in a heavy-based pot over medium heat. Add the onion, garlic and salt, then cook until the onion is translucent, about 4 to 5 minutes.

    2. Add tomato paste and cook, stirring, for 2 minutes. Add sun-dried tomato (with its oil) and the crumbled stock cube. Cook for 3 minutes.

    3. Add canned tomato, water (use water to rinse the cans), sugar and pepper. Bring to a simmer and cook for 25 minutes, or until the tomatoes have broken down. Using a stick blender, blend the soup until smooth.

    4. Ladle into bowls. Top with extra sun-dried tomatoes, if using, and drizzle with olive oil. Serve with croutons on the side for dunking.

    5. Crostini: Preheat oven to 180C fan-forced (200C conventional). Brush both sides of the bread with olive oil, and sprinkle with salt. Place bread slices on a baking tray and bake for 8 minutes, turning halfway, until crispy and light golden. Serve with soup.

    Note: You can substitute a chicken stock cube for the vegetable stock cube, or you can use vegetable or chicken stock instead of a stock cube and water.
