The other day I saw Chef Anne Burrell demonstrate this delicious way to serve thick and tender steak! The brown sugar in the dry rub gives the steak a crusty finish, while the smoked paprika and other spices keep it savory. The recipe calls for Kosher salt - if you only have regular table salt, reduce the amount of salt to 1 1/2 - 2 tablespoons total. You need to refrigerate the seasoned steaks for several hours, a day, or longer. I personally don't recommend the 3 day chill period (shown in the published recipe) as the salt pulls moisture out of the meat and you may dry smaller steaks out completely. Chill time and grill preparation are not included in the prep time.

3 tablespoons kosher salt (to taste)
2 tablespoons brown sugar
1 teaspoon crushed red pepper flakes, pulverized
2 teaspoons spanish smoked paprika
1 teaspoon garlic powder
oil, for brushing grill
2 (22 -24 ounce) bone-in rib eye steaks, about 2-inches thick
extra virgin olive oil

Steps:

  • Combine all the spices in a bowl. Stir to evenly distribute all the ingredients. If you want to monitor the amount of salt, combine all the spices except the salt in a bowl. Add 1 tablespoon Kosher salt and stir. Taste the rub and then gradually add more salt to taste.
  • Rub the outside of each steak on all sides generously with the rub and store any leftovers in an airtight container. Wrap each steak in plastic wrap two times, and refrigerate up to 24 hours (my preference) or at most 3 days. This makes the steak taste aged.
  • Preheat a gas or charcoal grill until hot. Brush the grill to remove any left over food, then oil the grill. Remove the steaks from the refrigerator about 20 to 30 minutes before cooking and let them come to room temperature. Just before cooking, remove the plastic wrap and lightly oil the steaks with extra-virgin olive oil.
  • Place the steaks on a very hot grill and char both sides of the steaks, a few minutes per side. When the outsides of the steaks have become well seared, move the steaks to a cooler part of the grill to continue cooking for 6 to 7 minutes per side for medium rare.
  • Remove steaks from the grill and let rest in a warm spot for 7 to 8 minutes. Cut the steak off the bone and slice on the bias across the grain in slices to the thickness you prefer, up to 1 inch thick. Add the bone to the serving plate if you have folks who will appreciate it. If desired, drizzle the meat with extra-virgin olive oil. Serve immediately.

Seasoning ahead of time increases iron-y notes in prime-graded cuts of meat and breaks down the connective tissue, resulting in an especially juicy steak.

1 tablespoon Diamond Crystal kosher salt
2 (1 1/2-pound) 1 1/2-inch-thick bone-in rib eye steaks
2 tablespoons grapeseed oil
2 teaspoons black pepper
1/4 cup unsalted butter, cut into pieces
2 garlic cloves
Sel gris

Steps:

  • Holding salt about 1 foot above steaks, sprinkle both sides of steaks evenly with salt in a steady stream, pressing slightly to adhere. Place steaks on a wire rack set inside a rimmed baking sheet. Chill, uncovered, 72 hours, turning twice a day.
  • Remove steaks from refrigerator. Let stand 1 hour. Preheat oven to 400°F. Heat oil in a 12-inch cast-iron skillet over high. Sprinkle steaks evenly with pepper. When a wisp of smoke rises from skillet, add steaks in a single layer, and cook, undisturbed, until a light brown crust forms, about 4 minutes. Flip steaks, and cook 4 minutes. Using tongs, turn steaks on fatty edges, leaning steaks against sides of skillet to keep them stable, if needed. Cook, rolling occasionally to render fat on edges, until caramelized all over, 4 to 5 minutes. Place steaks flat in skillet, and add butter and garlic around steaks.
  • Transfer skillet to preheated oven. Roast steaks 5 minutes. Transfer skillet to stovetop over medium. Slightly tilt skillet toward you so butter pools in bottom of skillet; spoon brown butter over steaks. Carefully flip steaks, and baste again. Return skillet to oven, and roast until a thermometer inserted in thickest portion registers 120°F, 4 to 6 minutes.
  • Transfer steaks to a cutting board, and let rest 10 minutes. Remove bones, and separate fatty strip from each steak. Slice steak thinly against the grain, and reassemble steaks on a platter, fanning slices out slightly. Arrange bones on plates; sprinkle steaks with sel gris.

    Recipe for Pan-Roasted Wagyu Ribeye Steak, White Truffle Butter and Caramelized Onions

    Ingredients

    For the steak:

    • 2 Wagyu beef ribeye steaks (approx. 10 oz each)
    • 2 tbsp vegetable oil
    • Kosher salt to taste
    • Freshly ground black pepper to taste

    For the caramelized onions:

    • 2 tbsp vegetable oil
    • 3 large yellow onions, thinly sliced

    For the white truffle butter:

    • ½ cup (1 stick) butter, room temperature
    • 1 small leek, minced
    • 1 tsp white truffle oil

    Directions

    1. Place a saucepan over medium-high heat.
    2. Add the onions and cook for about 25 minutes, stirring occasionally. The onions will become dark and soft as they achieve a caramelized flavor.
    3. Combine the butter, leek and truffle oil in a bowl and blend together. Refrigerate for about 10 minutes to set.
    4. Place an oven-safe skillet over medium-high heat. Add 2 tablespoons of vegetable oil.
    5. Pat the steaks dry with a paper towel, then season with salt and pepper on both sides. Add to the heated skillet, cooking for about 60 seconds per side to sear.
    6. Remove the skillet from the stovetop. Cover with aluminum foil and allow the steaks to rest for about five minutes.
    7. To serve, slice the steaks and transfer to plates. Top with caramelized onions and a generous slice of the truffle butter.

    Cooking tips: Use the leftover juices in the pan to top the steaks with a flavorful sauce.
