2 large eggs;
1 cup milk;
3 tbsp unsalted butter, melted;
1 ½ cups self-rising flour;
3 tbsp granulated sugar.

Steps:

  • In a mixing bowl, whisk together 2 eggs.
  • Add milk and melted butter to the beaten eggs. Whisk until combined.
  • Add 1 ½ cups of self-rising flour and 3 tbsp of granulated sugar to the wet ingredients. Whisk until smooth and no large lumps of flour remain. Don't over-mix the batter.
  • Heat lightly oiled large skillet over medium heat. Pour batter onto the hot skillet using a ¼ measuring cup. Spread the batter into a circle. Cook each pancake for 2 minutes or until bubbles appear on the surface. Then, flip and cook for an additional 2 minutes or until golden brown. Transfer to a plate. Repeat with the remaining batter to make all of the super fluffy pancakes. Grease the skillet with oil if needed. Enjoy with butter, maple syrup, honey, whipped cream, chocolate, bananas or berries.
