½ C. Heavy whipping cream
? C. Swerve confectioners sugar substitute
¼ C. Cocoa powder unsweetened
½ tsp. Xanthan gum
½ tsp. Vanilla extract
4 Tbsp. Lower carb peanut butter
3 Tbsp. Butter unsalted
3 Tbsp. Swerve confectioners sugar substitute
½ C. Almond flour
1 tsp. Vanilla extract

Steps:

In a mixing bowl combine the ingredients for the chocolate pudding layer, and beat on high until smooth, creamy and thickened.
Add the peanut butter and butter to a microwave safe bowl, and heat at 15 second intervals until the butter is melted and the ingredients are combined.
Place 3 Tbsp. Swerve confectioners sugar substitute, ½ cup almond flour and 1 tsp vanilla extract into the bowl with the peanut butter mixture, and stir to combine completely.
Add a thin layer of the chocolate pudding mixture to the bottom of each mini mason jar.
Place a thicker layer of the peanut butter mixture on top of the chocolate in the mason jars.
Fill the mason jars the rest of the way evenly with the remaining chocolate pudding mixture on top.
Garnish with some Lily’s baking chips if desired.

Steps:

In a medium-size mixing bowl, combine pudding mix and milk. Whisk until smooth. Allow pudding to set up 5 minutes, then fold in whipped topping and peanut butter cups. Pour mixture into crust. Chill at least 1 hour before serving.
