These blueberry scones are the perfect brunch (or anytime) treat! Just don't forget to slather on the icing.

granulated sugar

heavy cream, plus more

for brushing

1/2 c.

crème fraîche

1 1/4 c.

frozen blueberries (about 5 ounces)

2 c.

powdered sugar

3 tbsp.

milk

1 tsp.

vanilla bean paste

1 tbsp.

unsalted butter, melted

Pinch of salt

2 tbsp.

pearl sugar

Steps:

  • For the scones: Preheat the oven to 425°. Line a baking sheet with parchment paper. Grate the frozen butter on the large holes of a box grater into a bowl. Return to the freezer until ready to use. Whisk the cake flour, all-purpose flour, granulated sugar, baking powder, salt and baking soda in the bowl of a stand mixer. Combine the heavy cream and crème fraîche in a small bowl and chill. Add the frozen butter to the flour mixture. Using the paddle attachment, mix on medium-low speed until the butter is worked in, about 1 minute. Add the cream mixture and mix briefly, just until large clumps form, about 30 seconds. (The dough should hold together when you squeeze it.) Turn out the dough onto a floured piece of parchment paper. Pat and press into a rough square, then use a rolling pin to roll it into a 12-inch square. Using the parchment to help you, fold down the top one-third of the square, then fold the bottom third up over it, like a letter. Flip over the dough, re-flouring the parchment, and roll out again into a 12-inch square.  Scatter the blueberries on top of the dough, pressing them in. Roll up the dough into a log, like a jelly roll, using the parchment to help you (it’s OK if the berries poke through). Turn the log seam-side down and flatten so it is about 4 inches wide and 1 inch thick. Using a sharp knife, cut the log into three 4-inch squares, then cut each square diagonally in half. Transfer the scones to the baking sheet and brush with heavy cream. Bake, rotating the pan once, until the scones are golden brown, about 20 minutes. Let cool completely on the baking sheet. For the icing: Whisk the powdered sugar, 2 tablespoons plus 2 teaspoons milk, the vanilla bean paste, melted butter and salt until smooth. Stir in 1 more teaspoon milk if the icing is too thick. Spread on the scones and sprinkle with the pearl sugar.

12 oz. weight Bacon
2 c. All-purpose Flour
1 tbsp. Baking Powder
1 tsp. Salt
2 tbsp. Bacon Drippings
6 tbsp. Cold Butter, Diced
4 oz. weight Sharp Cheddar Cheese, Shredded
2 Cold Eggs
1/2 c. Cold Heavy Cream, Plus More For Brushing On Scones

Steps:

  • Preheat oven to 400ºF.Heat a medium size pot over medium-high heat. Add all the bacon to the pot. Cook bacon, stirring occasionally, until fat is rendered and bacon starts to crisp. Transfer bacon to a plate lined with paper towels. Set the bacon drippings aside to cool. Combine flour, baking powder, and salt in a large bowl. Whisk flour mixture until well combined. Add 2 tablespoons of bacon drippings to the flour. Stir together using a fork. Add butter to the flour mixture and cut into the flour with a fork or pastry cutter until flour looks crumbly. Add shredded cheese and bacon crumbles to the flour mixture, reserving some cheese and bacon for garnish. Whisk eggs and cream together until well combined. Add cream mixture to the flour mixture and mix together until just combined. Turn out the dough onto a well-floured surface and knead until dough comes together. Roll dough 3/4-inch thick rectangle. Cut the dough into 6 squares and cut the squares in half at a bias to make triangles. Brush the scones with heavy cream, sprinkle with shredded cheese and bacon crumbles.Transfer to baking sheet lined with parchment paper. Bake for 25–30 minutes or until golden brown.

Line a baking sheet with parchment paper and set aside.Cut the butter into 1/4 to 1/2 inch sized pieces, place it in a covered bowl, and let chill in the freezer for 5–10 minutes while mixing the dry ingredients.In a medium bowl, stir together flours, baking powder, baking soda, salt, brown sugar, cinnamon, and orange zest, breaking up any clumps of zest. With a rigid pastry blender or two knives, cut in the chilled butter until mixture resembles coarse meal with some pea-sized pieces. Make a well in the center, and then add buttermilk, orange juice, vanilla, and egg. Stir just until combined, taking care to not over mix. Gently fold in cranberries, just until barely combined. Try to work rather quickly, so the butter in the dough stays as cold as possible. If the dough gets too warm, the scones will lose their shape more easily in the oven and have a more relaxed appearance with less defined edges.Transfer dough to a lightly floured work surface. Working quickly, knead the dough gently two or three times to bring it all together. Do not over work the dough. Just make sure the dough is sticking together nicely. Pat dough into a 7-inch diameter circle and cut into 8 wedges. Transfer wedges to prepared baking sheet. Bake until scones are puffed and golden brown, about 14 minutes. Remove pan from oven and let scones sit on baking sheet for a couple minutes before removing to a wire rack to cool.For the orange nutmeg glaze:While scones are still just slightly warm, prepare the glaze. In a small bowl, whisk together all glaze ingredients until smooth. If the glaze is a bit stiff, add another teaspoon of freshly squeezed orange juice. Drizzle the orange nutmeg glaze over the scones using a spoon, as much as you desire. Allow icing to set completely, then serve.Note: Scones are best eaten on the day they are baked. To revive leftover scones' flaky texture the following day, preheat a baking stone to 300°F in the oven. Then place any number of scones on the stone and warm for 5–10 minutes. If you are planning to eat some of the scones the following day, wait to add glaze until after you have reheated them the next day.

  • Preheat oven to 350 degrees. In a large bowl, combine flour, ground oats, sugar, baking powder, and salt. Stir to combine. Add butter pieces and use a pastry cutter to work the butter and dry ingredients together until the mixture resembles coarse crumbs. Stir in the chopped pecans.Whisk together the cream, egg, and 1 teaspoon maple extract. Pour into flour mixture, stirring gently, until it all comes together. (Mixture will not come together in one cohesive ball; it should be in a few large clumps with some crumbs in the bowl.) If it is overly crumbly and will not come together at all, add a couple of tablespoons of extra cream and work it in.Turn the dough out onto a cutting board or floured surface and use your hands to press into a 6-to-8-inch circle about 3/4 inch thick. For the glaze: Combine the powdered sugar, milk, maple syrup and salt in a medium bowl. Stir until smooth, adjusting the thickness with more powdered sugar or milk if necessary. Place the rack of scones over a baking sheet to catch drips, then spread the glaze over the scones. Before the glaze sets, sprinkle with the bacon. Let the glaze set completely, about 1 hour.
