- Preheat oven to 350°. Grease and flour 2 (8 1/2- x 4 1/2-inch) loaf pans.
- Beat first 5 ingredients at low speed with an electric mixer just until dry ingredients are moistened. Increase speed to medium, and beat 1 minute or until batter is smooth, stopping to scrape down sides of bowl as needed. Pour batter into prepared pans.
- Bake at 350° for 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans to wire racks, and cool completely (about 1 hour).
- Place loaves on a serving plate or cake pedestal. Spread frosting over tops and sides of cakes. Garnish, if desired.

- Preheat oven to 325 degrees. Lightly brush a 9-by-5-inch loaf pan with butter; dust with cocoa powder, tapping out excess. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
- With an electric mixer on high speed, beat butter and granulated sugar until pale and fluffy, about 4 minutes. Scrape down sides of bowl. Reduce speed to medium; add eggs, one at a time, beating thoroughly after each addition and scraping down bowl as needed. Beat in 1/2 teaspoon vanilla and vinegar. Reduce speed to low; add flour mixture in 3 batches, alternating with buttermilk and starting and ending with flour mixture, until just combined. Add food coloring; beat until fully incorporated.
- Pour batter into prepared pan. Tap pan on counter; smooth top with an offset spatula. Bake until a tester inserted in center comes out clean, about 1 hour 20 minutes, tenting with foil if browning too quickly. Transfer pan to a wire rack and let cool 15 minutes, then turn cake out of pan onto rack and let cool completely. Cake can be stored, wrapped in plastic, at room temperature up to 2 days.
- When ready to serve, beat cream cheese with confectioners' sugar and remaining 1/4 teaspoon vanilla extract until smooth. Spread with a spatula over top of cake. Slice and serve.

Preheat the oven to 180°C/gas mark 4. Grease a 2lb loaf tin and line with baking parchment.
Put half the butter in a bowl with the light brown sugar and beat with a handheld electric whisk until light and fluffy. Beat in one egg at a time with 1 tbsp flour. Use a wooden spoon to stir in the food colouring, yogurt and vanilla extract. Fold in the remaining flour with the cocoa powder until smooth.
Spoon the mixture into the prepared loaf tin and bake for 50-55 minutes, until a skewer inserted into the middle comes out clean. Remove from the tin and cool on a wire rack.
Put the remaining butter in a bowl and use a handheld electric whisk to beat until smooth, then beat in the icing sugar. Add the soft cheese and beat until thick and pale. Spread over the cooled cake, then top with the defrosted berries and spoon over the reserved juices.
