Red Velvet Crinkle Cookies Recipe: How to Make It image

This recipe is special to me because it is totally original, my very own! The cookies are firm but not crunchy on the outside, and they're tender inside. The powdered sugar makes them melt in your mouth. —Jane Rundell, Alanson, Michigan

1 cup butter, softened
2-1/2 cups sugar
4 large eggs, room temperature
2 teaspoons white vinegar
2 teaspoons red paste food coloring
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 cup baking cocoa
3 teaspoons baking powder
1/2 teaspoon salt
1 cup white baking chips
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs, 1 at a time. Beat in vinegar, food coloring and vanilla. In another bowl, whisk flour, cocoa, baking powder and salt; gradually beat into creamed mixture. Stir in chips. Refrigerate, covered, 1 hour or until firm., Preheat oven to 350°. Shape dough into 1-1/2-in. balls; roll in confectioners' sugar. Place 2 in. apart on parchment-lined baking sheets. Bake until tops are cracked and edges are set, 12-15 minutes. Cool on pans 5 minutes. Remove to wire racks to cool.

unsweetened cocoa powder

1 1/4 tsp.

baking powder

1/4 tsp.

baking soda

1/2 tsp.

kosher salt

1/2 c.

(1 stick) Country Crock Baking Sticks

3/4 c.

granulated sugar 

2

large eggs

2 tsp.

pure vanilla extract 

1 tbsp.

red food coloring 

1/4 c.

powdered sugar

Steps:

  • Preheat oven to 325° and line 2 baking sheets with parchment. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.  In another large bowl using a hand mixer, beat Country Crock Baking Sticks and sugar together until light and fluffy. Add eggs, one at a time and beat after each addition, then add vanilla and red food coloring. Add dry ingredients and mix until just combined.  Roll about 1 tablespoon dough into a ball, then roll ball in powdered sugar. Repeat with remaining dough then reroll each ball in powdered sugar again.  Arrange balls about 1" apart on prepared baking sheets and bake until cookies have flattened and set in the middle, 10 to 12 minutes.  Let cool on trays 5 minutes, then transfer to wire rack to let cool completely.
