6 to 8 small red potatoes, quartered into 1/2-inch pieces
1 tablespoon olive oil or garlic-flavored olive oil
1 tablespoon minced fresh rosemary leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Combine all ingredients in a large bowl and toss to coat potatoes. Transfer potatoes to a large baking sheet or shallow roasting pan. Roast 25 to 30 minutes, until tender and golden.

1 Tbsp Olive oil extra-virgin
0.75 tsp Sea salt or kosher salt, divided
0.125 tsp Black pepper freshly ground
1 Tbsp Rosemary fresh, chopped

Steps:

  • Preheat the oven to 425°F. On a rimmed baking sheet, toss the potatoes with the oil, ¼ tsp of the salt, and the black pepper. Roast until the potatoes begin to brown, about 20 minutes.
  • Remove the potatoes from the oven. Sprinkle the potatoes with the rosemary and the remaining ½ tsp salt and toss to coat. Continue to roast the potatoes until tender throughout, about 10 minutes more.
  • Serving size: about 4 potatoes
