Loaded Red Potato Casserole Recipe: How to Make It image

This potato casserole has the same flavor of the potato skins you can order as a restaurant appetizer. It's an ideal dish for tailgating and potlucks. —Charlane Gathy, Lexington, Kentucky

16 small red potatoes (about 1-3/4 pounds)
1/2 cup 2% milk
1/4 cup butter, cubed
1/2 teaspoon pepper
1/8 teaspoon salt
1-1/2 cups shredded cheddar cheese, divided
1/2 cup crumbled cooked bacon
1 cup sour cream
2 tablespoons minced fresh chives

Steps:

  • Preheat oven to 350°. Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain; return to pot., Mash potatoes, gradually adding milk, butter, pepper and salt. Spread into a greased 3-quart baking dish; sprinkle with 1 cup cheese and bacon. Dollop with sour cream; sprinkle with chives and remaining cheese., Bake, uncovered, until heated through and cheese is melted, 20-25 minutes.

I found a recipe here on JAP that called for hash browns. I had alot of red potatoes so I made a similar recipe using fresh. It was wonderful. My man said he wants this type potato everytime now LOL. I served them at a bbq, so didn't really have time or extra energy to take pics, but will next time I throw it together. The children said it was the best picnic they ever went to in their lives ! LOL

Number Of Ingredients 7

5-6 medium red potatoes, washed
1 - 16 ounce sour cream
2 package(s) shredded cheddar cheese (2 cups)
4 slice(s) bacon, cooked and crumbled ( i used the pre-cooked/packaged type
1/2 cup(s) evaporated milk
3/4 cup(s) thawed frozen peas
2 teaspoon(s) black pepper

Steps:

  • Wash potatoes well, then run thru grater of food processor. Heat a large pot of water, drop potatoes in and bring to boiling, then turn off burner and place tight fitting lid to cover. Let stand 5 minutes.
  • while potatoes are steeping, mix the remainder of ingredients in a very large bowl.
  • drain potatoes and add to sour cream mixture.
  • spray a 13 x 9 foil pan with cooking spray. put potato mixture evenly into pan. cover with foil Bake on 350 degrees for 60 minutes.
  • remove from oven and check potatoes for doneness (taste test ) wink You may serve this way, or last 5-10 minutes, place 1 cup crushed bbq potato chips over top and return uncovered to oven.
