peppers - 22 lb (10 kg) red
aspirin - 2 crushed pills per jar
salt - eyeball it

Steps:

  • Do not wash the peppers, instead wipe them thoroughly with a slightly damp cloth. Bake them in a pepper roaster and arrange them tightly in jars, placing one crushed aspirin at the bottom of each.
  • Sprinkle with a little salt twice while arranging. Sprinkle with a little salt at the very top and add 1 more crushed aspirin.
  • Close the jars of roasted red peppers with close-fitting caps immediately and turn with their caps down to vacuum seal. Store in a cool, dark room.

4 large red bell peppers, halved, with stems and seeds removed
¼ cup olive oil
2 cloves garlic, pressed
1 tablespoon balsamic vinegar
½ teaspoon salt
½ teaspoon dried basil
¼ teaspoon seasoned pepper

Steps:

  • Set an oven rack about 4 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Place bell peppers, skin side-up, on the prepared baking sheet.
  • Broil peppers in the preheated oven until skin is blistered and blackened, 15 to 20 minutes.
  • Remove peppers from the oven and immediately transfer to a plastic or paper bag, seal, and set aside for 20 minutes. Peel off blackened skin and cut peppers into 1/2-inch strips.
  • Combine olive oil, garlic, balsamic vinegar, salt, basil, and seasoned pepper in a wide-mouth jar and shake until marinade is well blended. Place pepper slices into the jar, shake, and refrigerate until fully cooled and flavors have melded, 3 hours to overnight.

  • Cook pasta in salted water according to package directions. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onions and garlic and saute for 2 to 3 minutes or until starting to soften. Add the chopped red peppers and cook for 2 to 3 minutes, until hot. Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers.)
