Manhattan Fish Chowder Recipe | Cooking Light image

Northeasterners know the satisfying benefits of a good chowder—warm and comforting without being full of unnecessary fat. This is especially true when it’s a Manhattan-style red chowder, which switches out all that cream for a base of tomato and white wine. For deeper flavor try using fire-roasted tomatoes.

Yield Serves 4 (serving size: 2 cups)

Number Of Ingredients 14

2 tablespoons olive oil
1 cup chopped yellow onion (from 1 onion)
1 cup chopped carrot (from 2 large carrots)
1 cup quartered baby new potatoes
1 tablespoon chopped garlic (from 3 garlic cloves)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
4 cups seafood stock, such as kitchen basics
1/2 cup dry white wine
1 tablespoon fresh lemon juice (from 1 lemon)
1 (28-oz.) can no-salt-added crushed tomatoes
16 ounces skinless cod or snapper fillets, cut into 1/2-in. pieces
1/3 cup fresh flat-leaf parsley
Grilled whole-wheat baguette slices, for serving

Steps:

  • Heat olive oil in a Dutch oven over medium-high; add onion, carrot, potatoes, garlic, salt, and pepper; cook, stirring often, until onions begin to soften, 5 to 7 minutes. Add stock, wine, and lemon juice; bring to a boil. Reduce heat to medium, and simmer 10 minutes; stir in tomatoes, and simmer until thickened, about 10 minutes. Gently stir in fish; cover, and simmer 5 minutes. Sprinkle with parsley; serve with grilled baguette slices.

Number Of Ingredients 18

1 lb . redfish fillets (no bones at all)
3 T liquid crab boil
2 tsp salt
2 onions (chopped)
2 stalks celery (chopped)
2 cloves garlic (minced)
1 stick butter
3 Tbsp flour
1 Cup water
4 Cup milk
1 Cup frozen corn
1 Cup frozen chopped carrots
2 potatoes (diced)
½ tsp . curry
¼ tsp . white pepper
1 tsp . salt
¼ Cup green onion tops (chopped)
2 cups fish stock you will make

Steps:

  • In saucepan, bring water, crab boil, and salt to a boil, keeping pot covered so you don’t choke on fumes!
  • Gently place fish fillets in boiling water.
  • Boil until flaky.
  • Gently remove fish with slotted spoon and set aside, reserving all the fish stock.
  • In heavy Dutch oven, melt butter and sauté onion, celery, and garlic until wilted.
  • Blend in flour and cook on low being careful to keep sauce “white” and not “brown like a roux”.
  • Add about 1 cup of reserved fish stock, 1 cup of water, and milk to veggies.
  • Slowly bring to boil without scorching to thicken, stirring constantly.
  • Lower heat, add potatoes and cook on low until soft, stirring often.
  • Chowder will continue to thicken.
  • Add carrots and corn and cook until heated through.
  • Add, curry, white pepper, green onion tops, and 1 tsp. salt, blending well.
  • Lastly, break fish into bite-sized pieces and fold gently into chowder.
  • Heat on low for about five more minutes and serve. (If too thick, add more fish stock.)
