GREEK-STYLE SHRIMP AND POTATOES RECIPE | REAL SIMPLE
Simple, saucy, and scrumptious—that’s the name of the game with this easy shrimp dinner. The rich, brothy base is made of tomatoes, vegetables, onions, and green beans; finish by cooking the shrimp until just tender. Topped with feta and fresh dill, the dish is reminiscent of a cool night at a restaurant on a Greek island. Hey, you can dream it, at least, and all from the comfort of your kitchen. Stay on theme and seek out a Greek wine made from grapes like Assyritiko or Malagousia. Serve with garlic- and oil-rubbed toasted bread for dipping in the sauce.

COCONUT SHRIMP CURRY WITH PEAS AND POTATOES
You just can’t beat the bold, creamy flavor of this curry. For some acidity I added fresh tomato, but canned tomatoes would also work fine. I like my curries spicy, so I added a generous amount of chili powder, but omit if you’re not into spicy foods. Serve this curry with steamed basmati or brown rice.

SHEET TRAY SHRIMP AND POTATOES WITH LEMON RECIPE | REAL SIMPLE
A dinner that comes together on just one tray is a gift for weeknights. Start by roasting the potatoes, peppers, and scallions, then, right before you’re ready to eat, you add the shrimp for a final five minutes of roasting. It’s a hands-off dinner, allowing you more time to spend with your family, friends, or, hey, maybe just queuing a show up on Netflix. Shrimp with their tails removed are easier to eat, but if you’ve bought ones with their tails on, just pull off before adding to the sheet tray.
